CROQUETAS DE SOLOMILLO {TENDERLOIN STEAK CROQUETTES}

Rescato esta receta de mis archivos, es del año 2012 y creo que desde entonces mis fotografías han mejorado un poco. En este post, dejo las fotos tal cual las hacía entonces. Me he enterado que es la semana de la croqueta y además, ayer el cumpleaños del mayor croquetero de mi casa así que tenía doble motivo para publicar esta receta que hice entonces y que no he dejado hacer. Utilicé unos trozos de solomillo que me había sobrado de aquella navidad.

I´ve also found out that this is the croquette week and yesterday it was my son´s birthday and he´s the biggest croquette freak in my house so I had a double reason to rescue this wonderful recipe that I´ve been making since then. I used a piece of a tenderloin steak leftover from Christmas.

CROQUETAS DE SOLOMILLO
Tiempo de preparación 30 minutos para la bechamel y una noche para reposar. Hacer y freír las croquetas 30 minutos.
Dificultad fácil si sabes hacer una buena bechamel

INGREDIENTES PARA UNAS 25 CROQUETAS
1 libro de salsa bechamel, para hacerla mantequilla, harina y leche entera
1 filete de solomillo
sal y pimienta
Pan rallado
2 huevos batidos
200 gramos de harina
Aceite de oliva para freír

PROCEDIMIENTO
1. Picar el filete de solomillo, reservar. Derretir la mantequilla lentamente, vigilando que no se vaya a quemar. Cuando lo haya hecho, añadir la harina y formar bolitas. Tostaremos la harina un poco para que la bechamel no sepa a harina. Mover con fuerza para formar una pasta. Añadir la leche poco a poco, remover sin parar. Cuando la leche vaya desapareciendo, seguir añadiendo la leche hasta llegar casi a terminar el litro. Bajar el fuego y cocinar la salsa durante unos 5 minutos.
2. Añadir la carne, la sal y la pimienta recién molida. Las croquetas de carne son mis favoritas. Cuando era pequeña y veía a mi madre hacer bechamel, siempre me gustaban los agujeritos que se formaban en la salsa cuando estaba cociendo. Parecía el cráter de un volcán.
3. Echar la bechamel en una fuente y cubrirla con plástico de cocina para que no se forme una costra encima. Dejar que repose unas horas hasta que esté firme, yo lo hago la víspera.
4. Al día siguiente, dar forma a las croquetas, pasándolas primero por harina, luego por huevo batido y después por pan rallado.
5. Freírlas en aceite de oliva, girándolas para que se doren por todos lados.

TENDERLOIN CROQUETTES
Hands in time: 30 minutes for the bechamel sauce, some hours to rest the sauce or rest it overnight. 20 more minutes to roll them and fry them.

INGREDIENTS FOR 25 CROQUETTES
1 litre of basic bechamel sauce (butter, milk and flour)
Salt and pepper to season
1 tenderloin steak or meat leftovers
Breadcrumbs
2 beaten eggs
200gr flour
Olive oil to fry the croquettes

METHOD
1. Chop the beef tenderloin, reserve. Begin by melting the butter gently, don´t over heat it or let it brown, as this will affect the colour and flavour of the sauce. As soon as the butter melts, add the flour and over a medium heat and using a small pointed wooden spoon, stir quite vigorously to make a smooth, glossy paste. Now begin adding the infused milk a little at a time and stir again. Then, when this milk is incorporated, add the next amount and continue pouring each bit of liquid before you add the next. Turn the heat down to its lowest setting and let the sauce cook for 5 minutes, whisking from time to time.
2. While that´s happening, taste and season with salt and freshly milled black pepper. Add the meat as well. Meat croquettes are my favourite, no doubt. When I was little and I used to observe my mom cooking this sauce, I always liked the small holes that were formed whe the bechamel was cooking slowly. They looked like a volcano crater.
3. Pour the bechamel sauce onto a tray. To stop a skin forming on the sauce, cover with cling film.
Leave it rest overnight or for some hours.
4. Mould the mixture, pressing firmly to bind them together. Sprinkle some flour on to a board and roll each croquette in it so they are lightly dusted with flour. Roll them then into the beaten egg and again into the breadcrums.
5. Shallow fry them in olive oil, turning them halfway to a light brown colour.

  1. En primer lugar felicidadez a tu croquetero y luego decirte que las croquetaz deliciosas seguro y las fotografias como las de todas cuando empezamos, el caso es que laz croquetas las veo super hermosas....Bess

  2. Pintaza tienen esas croquetas con el solomillo y no dudo lo mas minimo que esten de rexupete , no me extraña que a tu hijo le encanten las croquetas no hay mas que verlo de pequeño, no habia quien le asaltara el plato ,me encanta la foto.

  4. Mi querida amiga. Q te voy a decir de esas croquetas q me han enamorado por completo q bien hechas y q ricas. Y la foto de ese principe dando buena cuenta de ellas ya enamorada del todo. . I pierna va muy lenta pero mucho mejor. Mil besicos te quiero mucho muchisimo

  5. Muchas felicidades a tu croquetero, seguro que está más que contento cada vez que tiene la oportunidad de comer estas croquetas. Yo creo que las comería a pares, porque me encantan y la idea de hacerlas con solomillo me atrae mucho
