CROQUETAS DE POLLO {CHICKEN CROQUETTES}

No soy muy buena usando comida que sobra, pero no puedo soportar tirar las cosas a la basura especialmente cuando hay tanta gente que pasa hambre. Intento aprovechar lo máximo la comida que sobra y si no, como es el caso de hoy,  de un plato sacar otra receta.

I´m not very good using leftovers, but I can´t stand to throw food away specially now there are so many people starving. I try to use as much as food as possible if there´s any left as today. From one recipe´s leftovers we can make another recipe.

CROQUETAS DE POLLO ASADO - ROAST CHICKEN CROQUETTES

INGREDIENTES - SALEN UNAS 30 CROQUETAS
Restos de pollo asado, cortados en trocitos pequeños
1 Litro de leche entera
1 cucharada de mantequilla
2 cucharadas de harina
Sal
Nuez moscada
Harina para rebozar las croquetas
Pan rallado para rebozar las croquetas
2 huevos batidos

INGREDIENTS - YOU GET APROX. 30 CROQUETTES
Roast chicken leftovers, chopped in small pieces
1 Litre of whole milk
1 tbsp butter
2 tbsp all purpose flour
Salt
Freshly grated nutmeg
Flour to roll the croquettes
Breadcrumbs to roll the croquettes
2 eggs, beaten

PROCEDIMIENTO - METHOD
Picar la carne del pollo sobrante.
Chop the chicken leftovers






Ahora haremos la bechamel. Ponemos la mantequilla en una cazuela, cuando se derrite añadimos la harina y las mezclamos bien hasta que tienen la apariencia de migas de pan. Cocinamos un minuto la harina para que se tueste un poco.

Now we will make the bechamel sauce. Put in a saucepan the butter. When it melts, add the flour and move quickly. The mixture will be the same as breadcrumbs. Cook the flour and butter for one minute, stiring constantly so the flour cooks a little bit.






Echar un poco de leche y mover rápidamente hasta que se forma una bola que se desprende de las paredes de la cazuela limpiamente. Echar más leche poco a poco cuando se vaya evaporando hasta terminar toda la leche.

Pour some milk over the butter and flour stir quite vigorously to make a smooth, glossy paste. Now begin adding the milk a little at a time first of all and stir again vigorously. Then, when this milk is incorporated, add the next amount and continue incorporating each bit of liquid before you add the next.








Añadir ahora los trocitos de pollo y cocinar un poco más.
Add now the chicken pieces and cook for 2 more minutes.






Añadir la nuez moscada y la sal
Add the nutmeg and the salt.







Obtendremos una salsa cremosa y sabrosa. Bajamos un poco la temperatura y seguimos cocinando y removiéndola durante 5 minutos más.
Siempre pensasba cuando era pequeña que cuando le bechamel hervía en la cazuela parecía el cráter de un volcán. Todavía me acuerdo.

Your reward will be a smooth, glossy, creamy sauce. Now turn the heat down to its lowest setting and let the sauce cook for 5 minutes, whisking from time to time. When I was little I always thought that the little holes from boiling looked like a volcano crater. I still remember this.






Poner la bechamel en una fuente y cubrirla con plástico de cocina. Debe reposar de un día para otro.

Put the sauce in a big tray and cover it with cling film. It should rest at least 12 hours until harder.





Poner la harina, los huevos batidos y el pan rallado en tres platos diferentes.

Put the flour, the beaten eggs and the breadcrumbs in three different plates.




Echar una cantidad de masa suficiente para hacer las croquetas en la harina.

Soak in the flour certain amount of the bechamel sauce to be able to form the croquettes.





Formar las croquetas con las manos y llenarlas de harina.

Form the croquettes by hand and roll them in it so that they´re all lightly dusted on flour.




Después pasarlas por el huevo
Then, soak them in the beaten egg






Y ahora pasarlas por el pan rallado

And to finish, now roll them in the breadcrumbs.





Seguir con lo que queda de masa hasta terminar.

Go on with the rest of the bechamel sauce until it´s finished.






Freírlas en aceite de oliva muy caliente hasta que tengan un color dorado.
Fry them in very hot olive oil, turning them halfway, to a light brown colour.




Estaban tan cremosas que casi no se podían freír.

They were so creamy, I couldn´t fry them.

  1. ¡Milagro! ¡Las hago igual que la superdiosa doméstica! (bueno, yo en la mantequilla del principio le frio media cebolleta picada muy finita) ¡Chúpate esa! Ya me puedo morir a gusto (es un decir, después de mi post de ayer lo mismo me mandas a los GEOS en helicóptero para que lo eviten) jijiji, besitos superdiosa...

  2. I've only tried ham and cheese croquetas, but these look amazing! I'm always intimidated to fry things (had a few bad experiences), but I'll have to give these a try. Thanks for sharing!

  3. Deliciosas esas croquetas, a mi tampoco me gusta tirar nada y creo que mañana voy a hacer una ensalada de merluza con unos restos. Yo cuando rebozo las croquetas no las paso por harina pero es una idea para que no se te pongan las manos llenas de engrudo, besos.

  5. Como las croquetas caseras ninguna, que se quiten todas las envasadas que venden. Además las tuyas tienen un relleno de lo más rico.
