CARRILLERAS DE CERDO IBÉRICAS A FUEGO LENTO {BRAISED IBERIAN PORK CHEEKS}

Cualquiera que no sepa y que lea que cocinamos los mofletes o carrilleras de cerdo o de vaca, seguro que nos miran raro. Son buenísimas, con un corte único porque tiene un montón de carne. Lo que pasa es que necesita ser cocinada a fuego lento durante varias horas, o en olla rápida claro. Como  resultado, una de las formas de comer carne mas tierna que tenemos en nuestro país. Yo hoy las he hecho en el horno.
  1. Anybody reading we cook and eat cow or pork´s cheek would think we´re mad. Carrillera is a melt in your mouth type of food. It is cheek, beef or pork, and despite their differences in taste, all of them are delicious. The cut of meat is unique because it is quite meaty but surprisingly lean, a rare marvel for many who expect it to be either fatty or tough. It does need to be braised slow cooked over a low heat for at least a few hours, but the end result is a fork-tender piece of meat that is one of the best things you can find in our country. I´ve cooked them in the oven today.

CARRILLERAS DE CERDO IBÉRICAS A FUEGO LENTO
Tiempo de preparación: 3 horas y media en el horno mas 30 minutos para preparar todo
Dificultad: Fácil

INGREDIENTES PARA 4 PERSONAS
8 carrilleras de cerdo
3 zanahorias, peladas y cortadas en trocitos
4 puerros, limpios y loncheados
2 cebollas blancas, picadas
2 cebollas rojas, picadas
2 pimientos verdes, sin pepitas y picados
1/2 kilo de champiñones, limpios y cortados en 4
2 dientes de ajo
1 cucharadita de harina
Sal y pimienta
Aceite de oliva virgen extra
Caldo de carne, yo tenía congelado
Pimentón de la Vera - una cucharadita
2 cucharadas de tomate frito natural
2 patatas grandes, peladas y cortadas para freír.
Una latita pequeña de petit-poix extra finos (guisantitos)

PROCEDIMIENTO
1. Precalentar el horno a 150º. Echar aceite de oliva en la cazuela que vamos a meter en el horno después. Marcar las carrilleras por todas partes, sellando la carne y dorandola por todos lados. Hacer esto poco a poco. Reservar en un plato.
2. Añadir a ese fondo, las cebollas, los pimientos, el puerro y los ajos y dorar todo bien.
3. Volver a poner la carne en la cazuela con todas las verduras, espolvorear con la harina, revolviendo bien para que se mezclen todos los jugos, añadir el pimentón también y la salsa de tomate.
4. Echar el caldo, añadir los champiñones limpios y cortados en cuartos. Sazonar con sal y pimienta.
5. Cuando empieza a hervir, tapar bien con papel albal, sellando bien las esquinas, poner la tapa y meter en el horno durante 3 horas. Saco la cazuela del horno, echo los guisantes y la vuelvo a cerrar.  Yo lo dejo dentro hasta casi la hora de comer con el horno apagado.
6. Un poco antes de comer, preparar unas patatas fritas para añadir después al plato. Servir.

PORK CHEEKS COOKED IN THE OVEN

Difficulty: Easy

INGREDIENTS SERVES 4
8 pork cheeks
3 carrots, peeled and chopped
4 leeks, cleaned and chopped
2 white onions, chopped
2 red onions, chopped
2 green peppers, deseeded and chopped
1/2 kilo of chesnut mushrooms, cut in quarters
2 cloves of garlic, chopped
1tsp flour
Salt and pepper to season
Extra virgin olive oil
Meat stock, mine was homemade and frozen
1 tsp of Sweet paprika - Pimentón de la Vera
2tbsp homemade tomato sauce
2 large potatoes, peeled and cut to fry
A small tin of extra fines petit-pois (peas)

METHOD
1. Preheat the oven to 150ºC. Bring 2tbsp of the oil to sizzling point in the casserole we´re going to bring to the oven and sear the pork cheeks, a few pieces at a time, to a rich dark brown on all sides.
2. Using a spoon, transfer the meat to a plate as it browns. Next add the vegetables to the casserole, the onions, leeks, garlics and peppers and brown that a little too.
3. Now, return the meat to the casserole or pan and sprinkle in the flour, stirring round to soak up all the juices. Add the paprika and the tomato sauce, stirring constantly.
4. Pour the stock, add the mushrooms, cleaned and cut in quarters. Season with salt and pepper.
5. Seal the casserole with aluminium foil, ad then put the lid on and transfer to the oven. It will take around three hours. When time is over, turn off the oven, take the casserole out the oven, remove the lid, add the peas and put the lid on again. Put it back in the oven again until lunch time.
6., Before lunch, peel some potatoes and fry them to go with the cheeks as a side dish.

  4. María Luisa, me maravilla esta carne y la he hecho en casa varias veces, pero nunca al horno, tendré que probarla así, porque el aspecto final es inmejorable, vaya recetaza!
