BIZCOCHO DE LAVANDA {LAVENDER CAKE}

Esta receta que estaba en una hoja de revista, llevaba un encabezamiento donde decía que no solo había lavanda en La Provenza sino que también en Norfolk, justo en la costa en Heacham, la revista era inglesa obviamente. Yo voy a añadir que no solo hay lavanda en esos sitios sino que ha habido mucha en la casa que tenía antes, increíble, me pasé toda la tarde recolectando las flores para meterlas en saquitos y poder aromatizar mis armarios. La verdad es  que estaba preciosa.

This recipe that it was in a magazine tear sheet, its title said that Lavender isn´t just Provence, it also says Norfolk because it´s grown there, right by the coast at Heacham, obviously that magazine was British. Well I´m going to add that not only Provence and Norfolk but in my ex-house here in San Sebastián, it was full of flowers, gorgeous, I spent a whole afternoon removing the lavender flowers to put them inside little sachets to fill my wardrobes with its aroma.
Con este bizcocho vuelvo al blog después de unas vacaciones que me han venido fenomenal. Han sido largas, pero ya estoy de vuelta.

Lo bien que queda este bizcocho para la tarde de después del desfile de 2ndskinco en la Semana de la Moda de la Mercedes-Madrid y que una vez mas, nos trajeron unos diseños preciosos con unas telas ideales. Lo vuelven a hacer cada temporada y siempre me quedo con la sensación de que se nos hizo corto el desfile, los ratos que pasamos después y que podíamos haber seguido hasta la noche. Un planazo la verdad.
  1. I was thinking this cake could have been great after the 2ndskinco catwalk in the Mercedes-Benz Fashion week Madrid. Once again, they showed us some wonderful designs with awesone fabrics. They make it every season and I have always the same feeling, that the catwalk was too short, the time spent with family and friends wasn´t enough and that we could have stayed until late at night. I always have a blast that day.

BIZCOCHO DE LAVANDA Y LIMÓN
Tiempo de preparación 20 minutos + 50 minutos de horno
Dificultad: Muy fácil

INGREDIENTES
300 gramos de azúcar
1 cucharada de lavanda seca
175 gramos de harina
1/2 cucharadita de levadura
1/2 cucharadita de bicarbonato
Una pizca de sal
2 huevos grandes, ligeramente batidos
250 gramos de yogurt Griego
125ml de aceite de oliva o de girasol
La cáscara de 1 limón + una cucharada de zumo de limón

PARA LA COBERTURA
1 clara de huevo
150 gramos de azúcar glas tamizada
El zumo de un  limón exprimido
6-8 ramitas de lavanda con flor
Azúcar para echar por encima

PROCEDIMIENTO
1. Calentar el horno a 180º. Poner el azúcar y la lavanda en una batidora y batir hasta que se rompa la lavanda. Tamizar la harina, la levadura, el bicarbonato y la sal en un bol. Añadir el azúcar de lavanda. En una jarra, mezclar los huevos, el yogur y el aceite.
2. Hacer un agujero en el medio de los ingredientes secos y gradualmente echar los ingredientes húmedos, removiendo bien a medida que se van incorporando. Añadir el zumo y la ralladura de limón, con cuidado de no remover en exceso. Forrar un molde y engrasarlo con mantequilla.
3. Hornearlo durante 55 minutos o hasta que el pastel se separa un poco de los bordes del molde o pinchando en el centro hasta que el pincho sale seco. Darle la vuelta al pastel, despegar el papel de hornear y dejarlo en una rejilla para que se enfríe.
4. Para el glaseado, que me quedó raro, batir las claras de huevo con un tenedor para romperlas un poco y poner la mitad en otro cuenco. Mezclar el azúcar glas con la mitad que queda, batiendo todo hasta que esté suave. Añadir el zumo de un limón exprimido. Distribuir todo el glaseado por encima del pastel, dejando que caiga por todos lados.
5. Para hacer una lavanda caramelizada en azúcar, introducir las ramitas de lavanda en las claras de huevo que habíamos reservado y espolvorear con el azúcar glas por encima, que no quede muy espeso. Dejarlo sobre una rejilla para que se seque.

LAVENDER CAKE
Hands on time 20 minutes + 50 minutes in the oven
Dificulty: Very easy

INGREDIENTS
300g granulated sugar
3/4 tablespoon dried lavender
175g plain flour
1/2 teaspoon aking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs, lightly beaten
250g Greek yogurt
125ml mild olive oil or sunflower oil
Finely grated zest of 1 lemon, plus 1 tablespoon juice
1 egg white

FOR THE ICING
150g icing sugar, sifted
Squeeze of lemon juice
6-8 sprigs of fresh lavender
Caster sugar for dusting

METHOD
1. Heat the oven to 180ºC. Put the sugar and lavender into a food processor and whizz until the lavender has broken down. Sift the flour, baking powder, baking soda and salt into a bowl. Add the lavender sugar. In a jug, mix together the eggs with the yogurt and oil.
2. Make a well in the centre of the dry ingredients and gradually pour in the wet ingredients, stirring as you go. Add the lemon zest and juice. Be careful not to overmix. Scrape into a base-lined and buttered cake tin.
3. Bake in the oven for 55 minutes, or until the cake is coming away from the sides of the tin and a skewer inserted into the middle comes out clean. Turn out the cake, peel of the paper and set on a wire rack to cool.
4. For the icing, beat the egg white with a fork to break it down, then put half of it in another bowl. Mix the icing sugar with the remaining half egg white, beating until smooth. Add a squeeze of lemon juice. Spoon over the top of the cake, allowing the icing to drip down the sides.
5. To make sugared lavender, dip sprigs in the reserved egg white and dust all over with caster sugar (not too thickly). Set on a wire rack somewhere warm and dry. When the sugar is dry, decorate the cake with the sprigs.

  1. Menuda pinta guapísima! hemos vuelto al ruedo casi las dos al mismo tiempo y aunque soy antitaurina, recurro a las metáforas del toreo que me vienen que ni pintás y es que a nosotras no nos cortan las orejas y el rabo ni de de Blas :-D jajajajaja! incombustibles que somos!

    Un besazo y lo dicho ;-) que a retomar buenas costumbres que es lo nuestro!

  3. Que bien verte nuevamente por acá, amiga. Nos debemos una larga charla, que ha pasado mucho debajo de este cielo. Te cuento que aquí también tenemos campos enormes de lavanda! En La cumbre, Córdoba hay muchos, y son bellísimos! Ver flores color lila hasta que se pierde en el horizonte es magia de la naturaleza. Hace poco me enteré que a las abejas les encanta la lavanda, y como sabés hay cada vez menos , por el uso de agroquímicos. Entonces les tomé un cariño aún más especial. Y me propongo tener algunas de ellas en mi jardín. No soy de las que le gusten las flores en la comida pero si para perfumar cajones y rincones de la casa.
