ENSALADA DE ENDIVIAS {ENDIVES SALAD}

Hoy no hay fotos paso a paso, la gente esperaba para comerse esta ensalada tan buena, con ingredientes simples y sin complicaciones, así que han sido unas fotos finish muy rápidas.
Una ensalada del restaurante Panier Fleuri de un libro que tengo desde el día de Reyes de 1987, pocos meses después de casarme y que he leído y releído y he hecho montones de recetas porque me gustó este libro desde el principio. He hecho ensaladas templadas, guisos, postres, pescados, tartas saladas y muchas mas y siempre con mucho éxito porque salen perfectas si sigues los pasos bien. Hoy me apetecía una ensalada aunque la verdad es que ha jarreado todo el día y estaba mas para sopa caliente que para una ensalada.

This is a salad that I´m taken from this book that I have since the three wise men´s day in 1987, just a few months after I got married, a book I have browse through many times and I must confess I´ve made many recipes because I liked it from the very beginning. I´ve made warm salads, stews, desserts, fish, savory tarts and much more and always with very good results because they come out perfect if you follow them carefully. Today I was craving a salad but it was raining cats and dogs all day and it was more like having a warm soup than a salad, but we all loved it.
María Jesús Fombellida, conocida por todos como 'Tatus Fombelllida' recuerda perfectamente que el mes que viene se cumplirán 12 años de la despedida de uno de los restaurantes con más prestigio de Gipuzkoa, el 'Panier Fleuri". Esta mujer, que desprende energía por los cuatro costados, fue la tercera generación de un negocio familiar que inició su abuelo en 1916.
Considerada la "dama de la cocina vasca", ella misma se encarga de puntualizar que nunca ha sido cocinera pero que sí conocía "al dedillo" los platos que se servían en su restaurant, como si los preparara ella, no en vano recibió en el año 1982 el Premio Nacional de Gastronomía por su atención en sala. "Yo disfrutaba mucho con la atención al cliente y el mundo de los vinos, hay que tener en cuenta que en aquel entonces no había sumilleres y que una mujer hiciera de maître y sumiller era muy poco habitual. Tatus tiene el gran honor de haber formado parte de la foto de familia de los miembros que iniciaron la denominada "nueva cocina vasca".

ENSALADA DE ENDIVIAS Y MUCHO MAS
Tiempo de preparación: 30 minutos
Dificultad: muy fácil

INGREDIENTES PARA 4 PERSONAS
15 nueces
1 lechuga pequeña
4 endivias
1 manzana semi ácida
100 gramos de queso Roquefort
20 ml de nata liquida
4 rabanitos
2 cebolletas pequeñas
Aceite y limón
Mostaza de dijon, al gusto. Yo he echado una cucharada.
Sal y pimienta
Perejil picado para decorar

PROCEDIMIENTO
1. Pelar las nueces. Limpiar los rábanos y cortarlos en lonchitas, reservar. Abrir las endivias y guardar la mitad de las hojas para adornar. La manzana en trozos grandes y pelada. Desmigamos la mitad del queso Roquefort.
2. Con el resto del queso y la nata, hacemos una salsa para untar las endivias que no se han cortado. Preparamos una vinagreta con el aceite, el limón, la mostaza, la sal y la pimienta.
3. En una ensaladera, cortamos la lechuga y las endivias que no hemos guardado en juliana. Se añaden las cebolletas cortadas finas también en juliana, las manzanas, el queso y los rabanitos. Se añaden las nueces y se aliña con la vinagreta.
4. Si se hacen en platos, se pondrá la mezcla en el centro y las hojas de endivias alrededor formando una estrella. Yo lo he hecho en una fuente grande para los 4. Se decora con perejil picado. 

ENDIVES SALAD AND MUCH MORE

Difficulty: very easy

INGREDIENTS SERVES 4
15 walnuts
1 small lettuce
4 endives
1 apple, not very sour
100gr Roquefort cheese
20ml whole cream
4 radishes
2 small spring onions
Olive oil and lemon juice 
Dijon mustard to your taste, I´ve used 1 tbsp
Salt and pepper to season
Chopped parsley to garnish

METHOD
1. Peel the walnuts. Clean the radishes, and sliced them, set aside. Peel off the leaves of half of each endive, set aside. Reserve the rest for later. Peel the apple and cut it in not very small pieces. Crumble half of the Roquefort cheese, set aside.
2. With the other half of the cheese and the cream, make a dipping to dip the endive leaves. Make a vinaigrette with the olive oil, the lemon juice, the mustard, the salt and the pepper. Reserve.
3. In a big bowl, cut the lettuce and the endives reserved in julienne. Add the onions also cut in julienne, the apple, the crumble cheese and the radishes. Add the walnuts and pour in the vinaigrette. 
4. If you set the salad on individual plates, scatter all the ingredients combined in the center and decorate with endives leaves around forming a star. I made mine in a big salad plate for the 4 of us. Garnish with chopped parsley.

  1. María Luisa, sí que le has sacado provecho al libro, madre mía! Supongo que casi te lo sabes de memoria. Veo que sigues con propuestas sanas y muy ricas, es la mejor forma de disfrutar y a la vez de cuidarse
