PASTA INTEGRAL CON VERDURAS {MIXED WHEAT PASTA WITH VEGGIES}

Hoy pasta con verduras, pero para aquellos que cuidan su salud, especialmente los que tienen problemas con el azúcar, o los que no quieren evitar los carbohidratos del todo pero comer mas sano, la opción de la pasta integral no está tan mal si encuentras una marca que te guste. Esta receta es buenísima, una vez mas la fuente es Jamie Oliver, me gustan sus platos de pasta y en esta su pasta era normal, no integral.

This recipe is gorgeous, again my source is Jamie Oliver, I love his pasta recipes and the pasta he used for this recipe was normal one, not wheat.


PASTA INTEGRAL CON VERDURAS
Tiempo de preparación: 30 minutos + picar todas las verduras
Dificultad: Nada complicada

INGREDIENTES PARA 2 PERSONAS 
3/4 Puerros si son finos - 2 si son mas gruesos, limpios y picados en rodajas finas
1 cebolleta, picada en brunoise
1 berenjena pequeña, pelada y cortada en cuadraditos pequeños
1/2 calabacín, pelado y cortado igual que la berenjena
1 pimiento rojo, cortado en trozos no muy pequeños
Champiñones, hongos o setas. Yo he usado hongos, he cortado en brunoise los tallos y las cabezas las he servido como guarnición aparte, fileteadas y echas a la plancha.
Aceite de oliva virgen extra
300 gramos de pasta
1 lata de 500 gramos de tomate o 500 gramos de tomate para hacer
Queso rallado, mozzarella o lo que se prefiera
Un poco de albahaca para decorar y picar

PROCEDIMIENTO
1. Limpiar bien los puerros y picarlos finamente. Hacer lo mismo con las cebolletas. Poner una sartén grande a fuego medio con aceite de oliva y saltear los puerros y cebollas durante 5 minutos hasta que están blandos, removiendo ocasionalmente. 
2. Picar el resto de las verduras, añadir primero los pimientos cortados mas grandes, cocinar 5 minutos y añadir la berenjena y el calabacín. Cuando pasan 10 minutos mas, añadir los tallos de los hongos.
3. Se añade salsa de tomate a las verduras y llevar a ebullición. El tomate se puede tener previamente echo, si no, se hará mientras se hacen las verduras. 
4. Cocemos la pasta siguiendo las indicaciones del paquete, escurrir y reservar un poco del agua de cocción. 
5. Incorporar la pasta a las verduras con el tomate, y mezclar bien. Rectificar de sal si hiciera falta y añadir agua de la cocción si fuera necesario.
6. Servirlas tal cual, con queso, sin queso, con mozzarella con lo que se prefiera. Calentarla en el horno hasta que el queso se deshaga. Que cada uno elija como prefiera. De cualquier manera es deliciosa.

MIXED WHEAT PASTA WITH VEGETABLES
Cooking in: 30 minutes plus chopping
Difficulty: Not too tricky

INGREDIENTS  SERVES 2
3/4 Leeks if small, two if they are thicker - cleaned and finely sliced
A small onion, cut in brunoise
1 small aubergine, peeled and cut in small squares
1/2 courgette, peeled and cut the same way we cut the aubergine
1 red pepper, in not so small pieces
You can use mushrooms, wild mushrooms or any kind of mushroom you like, I´ve used wild mushrooms, I´ve cut the stalk in small squares and sliced the cup and cook it gently and put it as a side dish. 
Extra virgin olive oil
300gr wheat pasta
1 can of 500gr of tomato or 500gr fresh pear tomatoes to make
Grated cheese, parmesano Reggiano, mozzarella or any cheese of your choice
Some basil to garnish and chop

METHOD
1. Clean the leeks thoroughly and I mean it, and finely slice them. Chop the onions too. Place a large pan on a medium heat with the oil, add the leeks and onions, cover and cook gently for 5 minutes or until softened, stirring occasionally. 
2. Chop the rest of the vegetables, tip in first the red peppers, cut not so small, cook for another 5 minutes and add the aubergine and courgette. Keep them 10 minutes more and add the stalks of the wild mushrooms. 
3. Add the tomato base sauce to the veg pan and bring to the boil. You can make the tomato sauce previously or make it while you cook this dish.
4. Boil the pasta following the instructions of the packet. Drain and reserve some water from that boiling.
5. Tip in the cooked pasta into the tomato and veggies pan and toss through the sauce and veg. Season to taste. Add some water if neccesary.
6. Serve just as it is with a sprinkling of cheese, without it, with mozzarella or whatever you prefer. Heat it in the oven so the cheese melts or not, just serve it the way you prefer. Any way would be gorgeous.
