PIMIENTOS RELLENOS DE CARNE {MEAT STUFFED PIQUILLO PEPPERS}

En mi casa los platos nuevos son recibidos con entusiasmo por la novedad, pero tengo que decir que cuando hago un clásico, la gente se vuelve loca.

La verdad es que en casa somos unos locos de los pimientos, yo misma podría vivir solo con pimientos, me chiflan y encima no tienen muchas calorías.

PIMIENTOS DEL PIQUILLO RELLENOS DE CARNE
Tiempo de preparación Media hora + media hora de horno
Dificultad; fácil

INGREDIENTES PARA 4 PERSONAS
16 pimientos del piquillo
300 gramos de carne picada, puede ser ternera y cerdo
2 cebollas
2 dientes de ajo
1 vaso de salsa de tomate
1 vaso de caldo de carne
2 cucharadas de harina
1 vaso de vino de jerez
1/2 vaso de nata líquida
Aceite de oliva virgen para rehogar  y luego para freír los pimientos
Harina para rebozar los pimientos
1 huevo batido
Sal
Pimienta

PROCEDIMIENTO
1. Primero preparamos la carne para el relleno. Se pica una cebolla y un diente de ajo. Se rehoga en una sartén con un poco de aceite de oliva. Se añade la carne picada y se cocina durante 2 minutos. Sin apartarlo del fuego, le incorporamos la nata líquida, se deja reducir un poco y se rellenan los pimientos del piquillo con esta mezcla. Se colocan en una fuente de horno. Reservar
2. Para hacer la salsa, se pica finamente la otra cebolla y el otro diente de ajo. Se pone a rehogar en una cazuela con aceite de oliva y cuando empiezan a dorarse las verduras, se añade la harina, se revuelve bien y se le añade la salsa de tomate, el caldo y el vino de jerez. Se deja reducir unos 10 minutos.
3. Ponemos una sartén con aceite, pasamos los pimientos por harina  y huevo batido y cuando esté caliente los freímos. Se ponen sobre papel absorvente para quitar el exceso de aceite y se vuelven a poner en la fuente de horno.
4. Echar la salsa que teníamos reservada por encima de los pimientos. Se precalienta el horno durante 10 minutos a 180º y cuando esté, se introduce la bandeja durante 20/25 minutos. La salsa se reducirá.
5. Servir.

MEAT STUFFED PIQUILLO PEPPERS
Hands on time 30 minutes + 30 minutes more for the oven
Difficulty: easy

INGREDIENTS SERVES 4
16 piquillo peppers
300gr ground beef, it could be half beef and half pork
2 onions, finely chopped
2 cloves of garlic, finely chopped
1 glass of tomato sauce
1 glass of meat stock
2tbsp flour + some more to coat each piquillo before frying
1 egg beaten
1 cup of sherry
1/2 cup of whole cream
Virgin olive oil for the veggies and some more to fry the peppers
Salt and pepper to season

METHOD
1. In a large skillet, heat some olive oil in a medium heat. Finely chop the 1 onion and 1 garlic and fry until soft. Add the grounded meat, and cook for 2 minutes. Without removing the skillet from the heat, add the whole cream, let it reduce for a while and stuff the peppers with this mixture. Place the stuffed peppers in an oven proof dish and reserve.
2. Coat the stuffed peppers with a light dusting flour and then into the beaten egg. In a frying pan, put some olive oil to high heat and fry the peppers on both sides until golden. Drain on paper towels and place them back in the oven proof dish.
3. To make the sauce, finely chop the other onion and the left garlic clove. Put some olive oil in a pot and when the onion and garlic are soft and golden, add the flour, combine well before adding the tomato sauce, the stock and the sherry.
4. Reduce the sauce for 10 minutes and when done, pour the sauce over the fried stuffed piquillo peppers.
Preheat the oven to 180º for 10 minutes and place the dish in the oven for 20/25 minutes. The sauce will reduce and thicken.
5. Serve

  2. Estoy de acuerdo, los platos de toda la vida son siempre una fiesta por mucho que nos gusten las cositas nuevas que también son bien recibidas.

    A mí me encantan los pimientos también pero los prefiero rellenos de atún por llevarle la contraria a mi Santo ja ja ja

  5. Uummmmmmmmmmmmmm que ganas de meter la mano y traerme esa fuente para cenar , hace años que hago los pimientos rellenos de carne ,es de las primeras recetas que hay publicadas en el blog ,yo los preparo de otra forma asi que tomo nota de tu receta nos van a encantar seguro.
    Como siempre receta y fotos del paso a paso son de 20 points.
