FRAMBUESAS CON BALSÁMICO {RASPBERRIES WITH BALSAMIC VINEGAR}

Un postre para tener en cuenta, ligero, sin horno, fresco y fácil, bueno si te gustan las frambuesas porque a mi me chiflan. Ese es el motivo por el que el postre me dió al ojo. Además, os voy a enseñar estos recipientes tan bonitos que he comprado en una tienda de San Sebastián que se llama Maria Kala´s, son preciosos. I´m a raspberries freak really, and that´s why it caught my attention. And at the same time, I´m going to use these beautiful bowls I bought in a shop in San Sebastián, Maria Kala´s. FRAMBUESAS CON BALSÁMICO
Tiempo de preparación: 20 minutos
Dificultad: Muy fácil

INGREDIENTES PARA 4 PERSONAS
10 gramos de mantequilla
450 gramos de frambuesas
Pimienta negra recién molida
INGREDIENTES PARA LA SALSA DE BALSÁMICO
50 gramos de agua
50 gramos de azúcar
30 gramos de vinagre balsámico
INGREDIENTES PARA LA CREMA DE MASCARPONE
100 gramos de mascarpone
20 gramos de azúcar glas
1 cucharada sopera de Kirsch o cualquier licor de melocotón, frambuesa, melón o ciruela

PROCEDIMIENTO
1. Derretir la mantequilla en una sartén, justo hasta que coja color avellana. Se agregan las frambuesas y se cuecen durante 1 minuto a fuego bajo. Remover lentamente con una cuchara de madera y con cuidado de no romperlas o aplastarlas. Se añade una pizca de pimienta recién molida. Reservar.
2. Para hacer el jugo de balsámico, se mezclan el agua y el azúcar en un cazo y se lleva a ebullición durante 2 minutos. Se retira y se deja enfríar. Se incorpora el vinagre balsámmico y se mezcla.
3. Para la crema de mascarpone, se coloca el mascarpone en un bol, se añaden el azúcar glas y el Kirsch y se mezcla bien con una varilla hasta obtener una crema. Reservar en el frigorífico.
4. Para servir, se colocan en un bol las frambuesas, se echa por encima el jugo del balsámico y se añade una bola o quenelle del mascarpone. Se puede decorar con unas hojas de menta.

RASPBERRIES WITH BALSAMIC
Hands on time: 20 minutes
Difficulty: very easy

INGREDIENTS SERVES 4
10gr butter
450gr raspberries
Freshly ground black pepper
INGREDIENTS FOR THE BALSAMIC JUICE
50gr water
50gr caster sugar
30gr balsamic vinegar
INGREDIENTS FOR THE MASCARPONE CREAM
100gr mascarpone
20gr icing sugar
1tbsp Kirsch. You can also use peach, cherry, melon or raspberry liquour.

METHOD
1. Melt the butter over medium heat in a frying pan, until light brown. Add the raspberries and cook them for 1 minute. Be careful not to break them or crush them, use a wooden spoon. Add a pinch of freshly ground black pepper. Remove from the heat and reserve.
2. To make the balsamic juice, mix the water and the sugar in a saucepan over medium heat, bring to the boil and cook for 2 minutes. Remove from the heat and when cold, pour the balsamic vinegar. Reserve.
3. To make the mascarpone cream, put the mascarpone in a bowl, add the icing sugar and the Kirsch or any other liquour and whisk well until you get a creamy mixture. Reserve in the fridge.
4. To serve, Put the raspberries in a bowl, pour some balsamic juice on top and put a scoop or a quenelle of mascarpone over the raspberries. To decorate, you can use mint leaves.

    Que maravilla de postre, me encanta, tengo frambuesas en el huerto, este año recogí un motón, tuve que congelar y lo mejor seria hacerlo con frambuesas frescas, lo tendre en cuenta, tiene que estar delicioso,
    Los cacharritos me apasionan son preciosos, si este verano voy a San Sebastian me pasaré no lo dudes....Besss

    A esta propuesta tuya no pondría ni una sola pega, porque con este balsámico y la cremita que te has marcado seguro que me encantarían.

  3. No te imaginas como me estas tentando con este postre me encantan las frambuesas ,tengo un vinagre balsamico echo con ellas pendiente de pubicar que esta de vicio ya te pasare la receta te encantara .
    De buena gana daba cuenta de un cuenco ummmm me marcho babeando.
