KOKOTXAS WITH PIQUILLO PUREÉ {KOKOTXAS CON PURÉ DE PIQUILLOS}

Celebraré San Valentín cocinando, y disfrutaremos todos de un día que es absolutamente normal. Esta receta es de El semanal del día 13 de Enero (La cocina fácil de Martín Berasategui). Quería probarla, las kokotxas me encantan así que tenía que hacer esta receta. Nos ha encantado y como se hace en el último momento es facilísima.

I´ll celebrate this day with joy and cooking which is something we all will enjoy. I´ve taken this recipe from a Sunday magazine (Martín Berasategui easy cooking). He´s one of the best cooks in Spain. I wanted to try it, we love Kokotxas and as you have to make it the last minute, it´s quick and easy.



*Kokotxas are small gelatinous pieces that are extracted of the head of hake or cod. It´s just a part of the fish head under the mouth, it is like the double chin of the fish. They are hard to find outside the basque country.


KOKOTXAS CON PURÉ DE PIQUILLOS - KOKOTXAS WITH PIQUILLO PEPPERS PURÉE

INGREDIENTES PARA 3 PERSONAS
24 kokotxas de bacalao
1,5 dl de aceite de oliva
2 ajos fileteados
150 gramos de pimientos del piquillo
Una guindilla
Perejil picado
Sal

INGREDIENTS - SERVES 3
24 Cod kokotxas
1,5dl olive oil
2 cloves of garlic, sliced
150gr piquillo peppers
One guidilla
Chopped parsley
Salt

PROCEDIMIENTO - METHOD
Una vez que las kokotxas están limpias (se cortan los extremos un poco), echamos el aceite de oliva en una sartén con los ajos fileteados y las guindillas (yo he puesto 2)

Once the kokotxas are cleaned and their edges cut, put the olive oil in a saucepan together with the sliced garlic and the cayenne peppers. 



Cuando el ajo empieza a "bailar", se agregan las kokotxas con la piel hacia arriba y se empieza a mover la sarten en sentido circular, para que salga toda la gelatina natural de las kokotxas. Siempre con movimientos circulares.

When the sliced garlic starts to move, add the kokotxas with the skins side up, so all the natural jelly from the kokotxas comes out and mixes with the oil forming a thick and wonderful sauce. Circular movements only.



Apartar la sarten del fuego y hacer el puré de piquillos.

Set aside while you process the piquillo peppers.





Echamos poco a poco el puré de piquillos en la sarten con las kokotxas. Que se vaya mezclando lentamente con el pil-pil que nos ha salido.

Pour little by little the piquillos puré into the saucepan with the kokotxas. It should be incorporated slowly so it mixes up with the sauce formed from the movements (jelly and olive oil, which is basque pil-pil sauce).



¡Ah!, he olvidado poner que hay que añadir perejil picado por encima y añadir la sal en el último momento. Fantástico.

Oh!, I forgot to write that you can add now the chopped parsley and season with salt in the last minute. This is really yummy!.

Tengo la suerte de haber encontrado cerca de Almuñecar una empresa de congelados para restaurantes de alto nivel que me vende las cocochas de bacalao finlandes ya desaladas que son una verdadera exquisitez, siempre las hago al pil pil o en salsa verde.. a la próxima.... pos zi!! PREMIO!! muchísimas gracias!!!!

Anda que si hubiera visto tu post ayer, hubiera comprado la Kokotsas, estuve en la pescadería y casi las compro, te ha quedado un plato de fabula, si es que todo te sale bien, por cierto por aqui ya no hace frio, que tal vamos por alli, sigue jarreando, manda un poquito para aqui que a mi no me importa, un besote guapisima
