PETIT CHOUX {PETIT CHOUX}


Hago esta receta de petit choux, yo creo que desde que me casé. Los he rellenado de crema, de nata, de chocolate, de helado de caramelo siguiendo una receta de Gordon Ramsay, en fín, admiten muchísimas variantes. 

I´ve been making this recipe since I got married. I´ve stuffed them with custard cream, whipped cream, chocolate cream, and toffee ice cream (following a Gordon Ramsay´s recipe). Anyway, you can make them sweet or salty, both things work just fine.



Llevé este postre a casa de unos amigos. Esta vez, rellenos de crema y nata.

I took these petit choux for a dinner at some friend´s house. This time, stuffed with custard cream and whipped cream.


PETIT CHOUX

INGREDIENTES PARA 30 UNIDADES
150ml de agua
50 gramos de mantequilla
60 gramos de harina
2 huevos medianos
Una cucharadita de azúcar

INGREDIENTS - MAKES 30
150ml water
50gr unsalted butter
60gr all purpose flour
2 medium eggs
1 tsp sugar

PROCEDIMIENTO - METHOD
La pasta choux es una masa ligera, crujiente y con aire. Se hincha en el horno y     
el aire que tiene es debido a la cantidad de agua que se convierte en vapor mientras se están horneando, lo que hace que la masa doble en volumen. A veces los he hecho con manga pastelera para probar, pero la verdad es que quedan mejor si se "moldean" con dos cucharillas, la forma es mas rústica. Aquí se puede ver claramente, los de crema son hechos con la manga y los de nata están moldeados con las cucharillas. Evidentemente, es mas bonita la forma de los de nata.

Choux pastry is the lightest, crispiest, airiest pastry. It puffs up in the oven until it is eventually set by the heat. The airiness, in fact, is caused because choux has a high water content, which is turned into steam during baking and this forces the pastry shell outwards and gives it volume. What is really good about choux is that it doesn't call for any particular pastry skills. I´ve done it once with the pipe, but the truth is that I like those made with two spoons, I love that rustic shape. You can see it in the pictures in here. I´ve made those stuffed with custard cream with the pipe, and the ones stuffed with whipped cream with two spoons. Obviously, the whipped cream ones are more beautiful. 


Poner el agua en una cazuela con la mantequilla cortada en trocitos para que se funda mas rápidamente y el azúcar. En cuanto se derrita la mantequilla, apagar del fuego para que no se evapore el agua.

Put the water in a saucepan with the butter, cut in small pieces, so it melts easily and the sugar. As soon as the butter has melted, turn off the heat inmediately so the water doesn´t evaporate.



Echar la harina ¡de un golpe!, rápidamente y de una sola vez, mientras se bate el conjunto vigorosamente. Se puede hacer con varillas electricas.

Tip the flour in, all in one go!!, with one hand while you beat the mixture vigorously with the other. You can do this with an electric hand whisk.


Batir con fuerza hasta que la masa se separa de los bordes de la cazuela.

Beat until you get a ball of paste that leaves the sides of the saucepan clean.


Ir añadiendo los huevos, uno a uno y batiendo bien cada uno de ellos.

Beat the eggs into the mixture, one by one, you can´t add the second one until the first one is completely mixed before adding the next one.



Cuando está hecho, precalentar el horno a 220º y poner la pasa en una manga pastelera o si no, ir formando los petit choux con dos cucharillas en una bandeja engrasada.

When this is done, preheat the oven to 220º and either put the mixture in a pipe or form the petit choux with two spoons on a greased baking tray.



Hornearlos durante 15 minutos. Tuve que hacer 60 así que la primera tanda los hice con la manga como he dicho antes para ver la diferencia.

Bake them for 15 minutes. I had to make 60, so the first ones were made with the pipe as I explained above.



Los de crema los relleno con una jeringa muy grande que compré en la farmacia, me gusta que estén cerrados y exploten en la boca. Los de nata, los abro con un cuchillo y pongo la nata.

The ones stuffed with custard cream are stuffed with a very big syringe I bought in the pharmacy, I like them to be close, so when you put them into your mouth, the cream simply explodes inside. The ones stuffed with the whipped cream, are cut half and simply stuffed.

  2. Te han quedado una pasta de choux, autentica, yo creo que tirnen que estas ricos hasta sin relleno, y con el relleno ya para volverse loca, me han encantado. Mil besicos amiga

Hoal guapisima, lo primero y ante todo felicitarte por tu cumpleaños, soy una desalmada, pero me perdonaras verdad, ya sabes cuando se esta de vacaciones una se olvida hasta de su cabeza, por cierto estos petit choux, ya podias pasarme unos cuantos, que son mis preferidos, bueno mas los de nata que los de crema, pero desde luego a los de crema no les hago tampoco ningún asco, muchos besos desde la Coata Brava

  5. Yo aprendí a hacerlos en un curso de cocina, es un vicio para los golosos algunos los hicimos también alargados y también quedan vistosos, rallamos la parte superior, en casa solo los he hecho una vez reconozco que soy muy vaga para la repostería je, je. Besines..
