UNA CREMA DE ALUBIA BLANCA CON ACEITE DE TRUFA {WHITE BEANS CREAM SOUP WITH TRUFFLE OIL}

La tormenta Filomena nos ha dejado y aunque todavía Madrid sigue una semana después llena de nieve y hielo, la verdad es que aquí poco la hemos visto. Entre los fríos últimos, la pandemia, los nuevos horarios del confinamiento y nuevos toques de queda en otros países nos espera un invierno duro, sigo pensando lo mucho que nos ha cambiado la vida y eso que tenemos mucha suerte de poder decirlo.
  1. Filomena storm has finally left us and though Madrid is still full of snow and ice a week after, the truth is that here in San Sebastián we haven´t had snow at all. Well, between the lowest temperatures recorded this year, the virus, the new timetables for the confinement and curfew we´re going to have a harsh winter. I´m still thinking about how much our lives have changed and yet we´re very fortunate because we can talk about it.
La navidad ha pasado por nuestras casas con mucha tranquilidad, ya nos llegará el momento de celebraciones multitudinarias aunque para que no decaiga el ánimo sigamos decorando nuestras casas.
  1. And Christmas was really quiet this year, there will be time to celebrate with our love ones in a near future I hope, though we still decorated our houses to keep our spirits high, well at least mine.
Y el miércoles es nuestro día, el día de San Sebastián y este año no habrá tamborradas por ninguna parte, aprovecharemos para descansar y desde luego yo me quedaré en casa porque las cosas no están nada bien.
  1. An on Wednesday it´s our day, San Sebastian´s day and this year there won´t be drums playing anywhere, we will relax and I´m not going to go anywhere but stay home because this is not a joke and things aren´t going so well.
Y esta sopa es la perfecta para estos días tan tristes. Es una sopa ideal, increíblemente fácil, riquísima, sana, barata y qué mas puedo decir, ah! que puede llevar mucha guarnición, champiñones, tostones, tocineta en cubitos o simplemente con unas alubias sueltas y unas gotas de aceite de trufa o de oliva o el que se quiera.
  1. And this soup is the perfect for these so sad days. This soup is just the thing. It´s gorgeous, delicious, cheap, incredibly easy, and healthy to boot, what else could I say?, ah yes!, you can use bacon cut in small cubes, mushrooms, croutons as a topping or like me, simply add some spare beans and some drops of olive or truffle oil or whatever other topping of your choice.
 
CREMA DE ALUBIA BLANCA CON ACEITE DE TRUFA
Tiempo de preparacion : 30 minutos mas el tiempo de remojo desde la víspera. Mas o menos se tarda 1 hora en hacer la receta
Dificultad: Muy fácil

INGREDIENTES PARA 6 PERSONAS
250 gramos de alubia blanca seca puesta a remojo desde el día anterior
1 cebolla cortada por la mitad
1 zanahoria cortada en trozo grande
1 puerro cortado en trozos grandes
1 litro de caldo de pollo, hecho en casa o de tetra brik
100 gramos de mantequilla muy fría
100 gramos de setas variadas
150 gramos de nata
Salsa de trufa (yo la compro en Cristina Oria, pero creo que la venden también en Mercadona)
Aceite de trufa o virgen extra para decorar

PROCEDIMIENTO
1. Escurrir las alubias y ponerlas en una cazuela grande. Cubrirlas con el caldo, añadir la cebolla, la zanahoria y el puerro y llevar a ebullición. Cocerlas durante 30/40 minutos. A mitad de cocción, sacar unas cuantas con una espumadera para que nos sirvan de decoración posterior. Terminar la cocción unos 15 minutos mas. Se pueden hacer en olla rápida en 15 minutos pero entonces tendremos que añadir otra guarnición.
2. Escurrir las alubias y retirar las verduras conservando un poco de caldo por si acaso. Pasarlas por la batidora hasta que estén muy suaves, es posible que tengamos que añadir algo del caldo que hemos reservado. Añadir una cucharada grande de salsa de trufa y batir un poco mas. Añadir la crema.
3. En una sartén, añadir la mantequilla y saltear las setas y champiñones. Añadirlos a la batidora y batir todo junto. Rectificar con un poco del caldo que estamos reservando si fuera necesario.
4. Distribuir en boles y decorar con la guarnición que hayamos elegido y unas gotas de aceite de trufa o de oliva virgen extra.

WHITE BEANS CREAM SOUP WITH TRUFFLE OIL
Hands on time 30 minutes, plus overnight soaking for the beans. Cooking time is about 1 hour.
Difficulty: Very easy

INGREDIENTS SERVES 6 
250gr dried white beans, soaked overnight in cold water
1 onion halved
1 carrot, halved or roughly chopped
1 leek cleaned and cut in three pieces
1litre chicken stock, homemade or not
100gr very cold butter
100gr of wild mushrooms or different mushrooms
Truffle sauce, I buy it in Cristina Oria in Madrid
150gr double cream
Truffle or extra virgin oil, optional to garnish

METHOD
1. Drain soaked beans and transfer to a large pan. Cover with the stock. Add the onion, leek and carrot, bring to the boil. Lower heat, simmer for 30-40 minutes or until beans are just tender. Using a slotted spoon, lift out a few spoonfuls of beans and set aside for a garnish. Continue cooking remaining beans until very soft, about 10-15min.
2. Drain beans from pan, but reserve some of the stock just in case you need it later on. Discard the vegetables and whiz soft beans in a food processor until completely smooth, you may add some stock now if needed. Add a tbsp of the truffle sauce and the cream and whiz again. 
3. Meanwhile, heat the butter in a large frying pan and fry the different mushrooms for 5 minutes or until just tender, whiz together with the beans. Add more stock. 
4. Serve in bowls and garnish with the different toppings you´ve chosen. Drizzle with some truffle or virgin olive oil.

  1. María Luisa, qué situación tan extraña estamos viviendo, está claro que el invierno se presenta duro, muy duro, y la cosa está claro que va para largo...

    Lamento que este año no puedas disfrutar de la tamborrada, sé la ilusión que te hace esta fiesta, pero lo importante en estos momentos es estar bien de salud.

    En cuanto a la receta, nunca he probado una elaboración como esta, pero ten por seguro que si la tuviese por delante te dejaría el bol limpio, me parece una receta deliciosa
