TORTILLA DE VAINAS {RUNNER BEAN TORTILLA}

He hecho tortilla de vainas montones de veces, pero jamás le he metido aceituna y menos rellena de pimiento rojo, entre otras cosas porque no me gustan las aceitunas calientes, además, creo que no había comprado esta aceituna en mi vida, así que cuando algo llama mi atención lo tengo que hacer. Esta receta es fácil, simple y sirve lo mismo para comer que para cenar, y bueno que haya alguna aceituna tampoco es tan grave. La acompañe con unos tomates cherry asados.

I´ve made runner bean omelettes thousand times, but I have never put olives in it, simply because I´m not so fond of warm olives, and believe me, never stuffed with red peppers, I think I had never bought this sort of olives in my life, so this caught my attention and I immediately thought I had to make this. This recipe is really easy and you can make it for lunch or dinner. In the end, the olives weren´t so bad.  I put some roasted cherry tomatoes as a sidedish.
TORTILLA DE VAINAS CON TOMATES ASADOS
Tiempo de preparación 20 minutos

INGREDIENTES PARA 2 PERSONAS
200 gramos de vainas, peladas y cortadas en tiras
5 huevos
Pimienta
2 dientes de ajo grandes, rallados finamente
3 aceitunas rellenas de pimiento rojo, cortadas
2 cucharadas de aceite de oliva
Queso Parmesano rallado
1 ralladura de limón
Sal y pimienta
Un paquete de tomates cereza asados durante 20 minutos a 180º con un chorro de aceite de oliva, sal y un chorro de vinagre balsámico

PROCEDIMIENTO
1. Pelar las vainas y poner una cazuela con agua a hervir. Echar las vainas y cocinarlas durante 5 minutos o hasta que estén tiernas. Colar.
2. Batir los huevos en un cuenco, con la ralladura del limón, el ajo, las aceitunas y la pimienta. Se incorporan las vainas. 
3. Calentar el aceite en una sartén anti-adherente de unos 23cm. Echar la mezcla de huevo y cocinar los primeros minutos hasta que se vaya cuajando. Dejar que se cuaje un poco mas, apagar el fuego, cubrir la sartén y dejarla durante 5 minutos, hasta que la parte de arriba del huevo también se haya cuajado. 
4. Servir con los tomatitos asados.

RUNNNER BEAN TORTILLA WITH ROASTED CHERRY TOMATOES
Preparation Time: 20 minutes

INGREDIENTS SERVES 2
200g runner beans, peeled the edges and cut into thin strips
5 eggs
2 large garlic cloves, finely grated
3 pimento-stuffed olives, thickly sliced
2tbsp olive oil
1 lemon zest, grated
1tbsp parmesan finely grated (optional)
1 packet of cherry tomatoes, roasted in the pre heated oven with olive oil, salt and balsamic vinegar at 180ºC for 25 minutes.

METHOD
1. Bring a pan of water to the boil, add cut runner beans and cook for 5 minutes or until just tender, then drain.
2, Beat the eggs in a bowl with the lemon zest, garlic, olives and some pepper, then stir in the beans. 
3. Heat the oil in a 23cm non-stick frying pan. Pour in the egg mixture and gently stir for the first couple of mins so that you see the egg cooking and the raw egg flowing into the base of the pan as you move it. Leave to firm up for a few mins, then turn off the heat, cover and leave for 5 mins so that any raw egg on top cooks through.
4. Serve with the roasted cherry tomatoes.

  4. María Luisa, pocas cosas me gustan más en la vida que una buena tortilla, pero sin embargo no como aceitunas, con todas las recetas que he publicado hasta ahora verás muy pocas en mi blog... Aún sí solo puedo decir que se ve una tortilla estupenda
