PATATAS ASADAS DE MANDOLINA {SLICED BAKED POTATOES}

Qué haríamos sin patatas. Una guarnición fantástica y nada complicada. Lo peor el tiempo de horno que es un poco largo, pero el resultado es espectacular. Lonchear las patatas lo mas finamente posible y después ponerlas en una fuente de horno, las esquinas quedan crujientes y doradas. Buenísimas la verdad.

This is a great side dish and believe me not complicated at all, the worst part, the time in the oven, because it´s a bit long but believe me, the result is gorgeous. Slicing the potato as thinly as possible and stacking it in a baking dish makes the top extra golden and crisp.

PATATAS ASADAS CORTADAS CON MANDOLINA
Tiempo de preparación unos 20 minutos
Tiempo en horno 1 hora 40 minutos
Dificultad fácil

INGREDIENTES PARA 8 PERSONAS
500ml de caldo de verduras, yo he usado uno que tenía congelado
4 hojas de laurel
1 limón
1 kilo y medio de patatas nuevas
25 gramos de mantequilla sin sal, derretida

PROCEDIMIENTO
1. Precalentar el horno a 180ºC. Echar el caldo en una cazuela con las hojas de laurel. Exprimir el zumo del limón y añadirlo a la cazuela junto con las pieles. Llevar a ebullición y reducir el conjunto a fuego lento durante unos 5 minutos
2. Mientras tanto, lonchear las patatas lo más finamente posible, yo lo hice con una mandolina, pero se puede hacer con cuchillo también. Colocar las patatas como en la foto en una fuente de horno. Retirar las peladuras del limón del cazo y echar el contenido sobre las patatas.
3. Pincelar las patatas con la mantequilla derretida y hornearlas durante 1 hora 30 minutos. La primera hora mejor taparlas con papel de aluminio para que no se quemen en exceso. Después quitar el papel y hornearlas durante media hora mas. Servir.

SLICED BAKED POTATOES

INGREDIENTS SERVES 8
500ml vegetable stock, I´ve used a homemade one I had in the freezer
4 fresh bay leaves
1 lemon, halved
1.5kg new potatoes
25g unsalted butter, melted

METHOD
1. Preheat oven to 180ºC. Pour the stock into a saucepan with the bay leaves. Squeeze in the lemon juice and add the halves to the pan as well. Bring to the boil and reduce to a gentle simmer for 5min.
2. Meanwhile, slice the potatoes as thinly as possible, about 3mm. Arrange the potatoes in an ovenproof baking dish as in the picture, discard the lemon halves and pour over the warm stock.
3. Brush the tops of the potatoes with melted butter and bake for 1hr 30min, until cooked through, golden and crisp. I covered the potatoes with aluminiun foil for 1 hour, and removed it for the last 30 minutes. Serve as a sidedish.

  1. Me apunto, a pesar del calor. Merecerá la pena encender el horno.
