HALLOWEEN y GENOVESA {HALLOWEEN & GENOVESE CAKE}

Estaba pensando en todas las recetas de Halloween que hay por ahí, y me ha venido a la memoria aquel pastel que hice con fondant, el único por cierto. Fuímos una amiga y yo a un curso y la verdad es que todavía no había puesto la receta del bizcocho Genovés, base para un fondant.

I was thinking about all the recipes for Halloween we can find these days in the internet, and suddenly a cake I made with fondant came to my mind..(I´m saying a cake because it´s the only one I made). That day, a friend of mine and I went to a course and I realised I didn´t post the recipe for the Genovese cake, which is the perfect base for a fondant.
Esta vez no hay paso a paso de las fotos, la verdad es que ¡no se que he hecho con ellas!, menos mal que guardo las anteriores siempre.

Total, que estaba con Halloween. La primera vez que yo supe de este día fué el año 1980 en Estados Unidos claro, no entendía nada, aquí poníamos flores a nuestros muertos y allí la gente se vestía de ellos. La mitad del vecindario donde yo vivía, se pasó dos días (o más) explicándome en qué consistía el plan, los caramelos, el "truco o trato" y toda esa parafernalia. La verdad es que me lo pasé bien. Mis hijos y sobrinos si que se han disfrazado alguna vez. Además, hoy es el aniversario de mi padre, casualidad.
  1. Anyway, back to Halloween. The first time I was told about this day, it was in 1980 when I was in the U.S.A., I didn´t understand anything, while in Spain we were leaving flowers on our loved one´s graves, they were wearing costumes accross the atlantic, weird!. The neighbourhood I was living in at that moment, spent two days (or more) trying to explain to me what the plan for that day was, the "trick or treat" and its paraphernalia. I had a great time that day. My children and their cousins have participated many times. Today is my dad´s anniversary too.
Dos años más tarde de aquel Halloween al otro lado del Atlantico, se estrenó la película E.T. que yo ví en el festival de cine de San Sebastián. Siempre me acuerdo del disfraz de E.T. para Halloween y cuando he forrado mis pastelitos de Genovesa de eso me estaba acordando, en hacer un grupito de E.T.s
  1. Two years after that Halloween across the Atlantic, it was the premier of E.T. we went to watch it during the San Sebastián film festival. I always remember the costume he was wearing for Halloween, that´s exactly what I was thinking when I covered my Genovese cakes with the white fondant I had at home, to make a gang of E.T.s
Este pastel básico no contiene ningún tipo de levadura ya que toma su volumen del aire de la espuma resultante al mezclarla. Comparado a otros bizcochos esponjosos el bizcocho Genovesa usa huevos enteros en vez de montar las claras y yemas por separado. Lo mejor es batir los huevos sobre una fuente de calor o al baño maría. Las harinas deben mezclarse lentamente en la mezcla de los huevos.
  1. This basic sponge cake does not contain any chemical leavening and gets its volume only from the air pockets suspended in the batter while mixing. Compared to its other sponge cake relatives, the Génoise uses whole eggs instead of beating the yolks and whites separately to combine them at a later stage. The best thing to do is whip the eggs with sugar (in the bowl of your mixer) directly over a flame or a "bain marie". The flours are slowly folded into the egg mixture.
BIZCOCHO GENOVESA
INGREDIENTES
5 huevos enteros
2 yemas
170 gramos de azúcar
Ralladura de un limón
Una pizca de sal
130 gramos de harina
30 gramos de maizena
1 cucharadita de aceite
1 cuchara sopera de leche

PROCEDIMIENTO
Precalentar el horno a 200º
1.Se ponen los huevos, las yemas, el azúcar y la ralladura en un bol y se bate hasta formar una espuma tres veces mayor del tamaño original. Cuando se forman estrías de la batidora en la crema es que ya está hecha.
2.Tamizar la harina con la maizena y añadirlas poco a poco a la crema anterior. 
3.Templar la leche con el aceite y verterla lentamente sobre la mezcla. 
4.Hornear durante 30 minutos.

GENOVESE CAKE
INGREDIENTS
5 whole eggs plus 2 yolks
170gr caster sugar
Lemos zest (1 lemon)
A pinch of salt
130gr flour
30gr cornflour
1tsp olive oil
1 tbsp whole milk

METHOD
1.Preheat the oven to 200º
2.Put the eggs, the yolks, the sugar and the lemon zest in a bowl. Whisk until you form a foam that is three times bigger than the original amount until soft peaks are formed.
3.Pass the cornflour and the flour through a sieve and combine with the previous mixture.
4.Heat the milk with the olive oil a little bit and pour it in the bowl.
5.Bake for 30min.
Y cuando lo terminé, con un vasito pequeño corté trozos de bizcocho y los unté con mermelada de melocotón para que se pegue el fondant, yo no soy buena con el fondant.
  1. And when I finished, with a very small glass I cut pieces of the cake, rub them with peach jam and put a piece of fondant on them. I´m not good at this, I don´t like to manipulate fondant.
Y creo que es el mejor momento para volver a la serie que me tiene totalmente enganchada, "American Horror story freak show"...hablando de terror.......

  1. Una maravillosa entrada para un día muy especial, yo nunca trabajé fondan, solo las galletas que tengo publicadas y que horror, me parece dificil, tampoco fuí a ningún curso, pero tu primer fondant dió para mucho, que maravilla, te quedo todo impresionante de bonito...Bess

  2. Holaaaaaaaaaas por fin asomo la patica ,estos dias de atras he estado pachucha y he estado desconectada hoy me encauentro un poco mejor y empiezo a ponerme al dia.
    Que bonita te ha quedado la tarta de fondant seguro que lo pasasteis genial en el curso tu amiga y tu por lo que deduzco no has vuelto ahcer nada con el verdad jajaja las tartas son muy monas y originales pero no a todo el mundo le gustan son muy dulces yo hago un par de ellas al año solo por que si las hiciera muy amenudo me dirian que me las comiera yo.
    Los fantasmicos te han quedado diviisimooooooooooooos me encantaaaaan y cuando tenga un ratin voy a ver si encuentro esa serie que tambien me has enganchado al leerte jis jis.

Un dia muy especial, aunque yo no sea mucho de Halloween me hace mucha gracia como se disfrazan y desde luego como se lo pasan, yo me quedo con mis buñuelos y con mis huesos de santo, en cuanto a tus E.T. te han quedado chulisimos y estoy segura que con ese bizcocho genovés estaban riquísimos, yo suelo hacerlo al baño de María, pero tu forma de prepararlo es mucho más fácil, así que probare a hacerlo, que me ha gustado más que la mía, besos
