PASTEL DE ARROZ {RICE CAKE}

Receta "robada" del blog de Ana Vega aquí. El por qué del nombre cuando no lleva ni tan siquiera arroz parece ser que es porque en sus orígenes se usaba harina de arroz. Circulan otras versiones como que se hacían en Filipinas con harina de arroz y la receta la trajeron los marinos de allí y aquí se sustituyó por harina normal.
  1. Recipe "stolen" from Ana Vega´s blog here (sorry it´s only in Spanish). I have no clear why they call these cakes "rice cakes" when they don´t even have rice flour as an ingredient. There are many versions for these answers, one is that they used rice flour many years ago but not any more, and the other one is that sailors brought the recipe from the Filipines where they used rice flour to make them, and in Bilbao they substitute this flour for the all purpose one.
Hacer este pastel ha sido una pesadilla, esto demuestra que Ana es mucho mejor cocinera que yo, pero como yo soy mucho más cabezota que Ana, no paro hasta que me salga "más o menos". Lo he hecho 3 veces. Aún así, vale, el resultado a la vista no está mal, pero no me he quedado muy contenta, aunque claro, con estos ingredientes el sabor era buenísimo. Para cuando llegaron los pastelitos a la Sociedad, el hojaldre se había vuelto blando, ya no estaba crujiente.....algo sigue fallando.

It´s been a nightmare to make these cakes, this proves Ana is a much better cook that I am...there´s one thing clear though, people call me "hardhead", "stubborn", that I have a very stubborn streak...well....whatever, the thing is that I wasn´t going to stop until this came out better so I made them 3 times. Okay, still I´m satisfied enough with the result. The cakes were good because with these ingredients the opposite would be impossible. By the time the cakes arrived to their destination (men having dinner at the gastronomic society), the puff pastry wasn´t as crunchy as before.......something is not working properly in here. Definitely is me!!.
LOS INGREDIENTES
1/2 litro de leche entera
125 gramos de azúcar
125 gramos de harina
3 huevos
75 gramos de mantequilla a temperatura ambiente
Un paquete de hojaldre comprado en un super, salen 12 pastelitos.

  3. 125gr caster sugar
  4. 125gr flour
  5. 3 eggs
  6. 75gr butter, room temperature
  7. A packet of puff pastry, bought in a supermarket will be fine, you get 12 cakes from 1 packet.
PROCEDIMIENTO - METHOD
Batir la mantequilla con el azúcar hasta que esté cremosa. Añadir los huevos uno a uno.
  1. Beat the butter with the sugar until fluffy. Add the eggs, one by one.
Y añadir la harina también poco a poco (en tres golpes)
  1. And add the flour, little by little in three times.
Y finalmente la leche poco a poco también.
  1. And finally the milk, little by little.
Mientras estiro un poco la masa con el rodillo, sigo las indicaciones del blog de Anita al pié de la letra.
  1. While I´m rolling the puff pastry slightly thinner on my table, I´m following the instructions from Ana´s blog thoroughly.
Cuando termino, hago unos círculos con un vaso engraso los moldes y los forro con el hojaldre.Precalentar el horno a 200º
  1. When this is done, I made some circles and grease the patty tins lightly and line them with the rounds. Preheat the oven to 200ºC.
La masa resultante de batir todos los ingredientes resulta rara, pero no os asustéis, ¡es así!.
  1. The batter looked weird, but don´t panic, it´s just like that.
Primer error. Había que meter los pastelitos en la parte baja del horno durante 20/25 min. Yo los metí en el medio y el resultado fué este. Subieron subieron y subieron como un suflé, y luego bajaron bajaron y bajaron.
  1. First mistake. I was suppose to put the patty tins in the lower part of the oven, well I put it in the middle and bake them for 20/25 min. They went up and up like a soufflé and when they were out they went all the way down again.
Segundo intento. Procedimiento el mismo y con los mismos ingredientes. No me preguntéis qué pasó, perdí el hojaldre en algún punto de mi cocción....¡increíble!.
  1. Second attempt. Same method and same ingredients. Please don´t ask me what happened. I lost my puff pastry somewhere inside the oven!. Wow!.
Aún así, hubo gente en mi casa que se comió estos pastelitos deformes.
  1. Still, there were people in my house who ate all the deformed cakes.
Tercer intento. Mismos ingredientes, mismo procedimiento. Esta vez parece que me voy acercando a la receta de Ana. Cambio el molde. Esta vez utilizo uno de silicona que es un poco mas profundo, pero como solo tiene 6 moldes, lo hago en dos veces. ¡Me salen diferentes!...¡ME RINDO!.
  1. Third attempt. Same ingredients, same method. This time it seems to me this is going to work. I changed the patty tins, I used one made of silicon which deeper tins, but it has only six so I have to do two batches.
  2. Both came different!. I GIVE UP!.
Al menos estos eran más bonitos. El hojaldre estaba hecho.

  4. Ja,ja, menudo trabajo te has tomado para hacer el post, pero ha merecido la pena porque los últimos te han quedado perfectos. Lo bueno que tienen estos pasteles de arroz, es que están buenos hasta deformes.

    No sé cómo serán los de Ana, pero estos que nos traes, yo los veo muy bien y el corte en la primer foto es espectacular. Vamos, me han dado ganas de ponerme con ellos :)

  7. Mujer, a mí la primera vez tampoco me salieron bien jjjjjj Los últimos, en los que se ve el corte, están espectaculares!

    Lo del hojaldre blanco a su llegada a la santa sociedad puede ser por haber estado metido en el molde hasta ese momento, con el calor residual del molde se forma humedad. Intenta sacarlos del molde en cuanto puedas y dejarlos enfriar sobre una rejilla para que se escape el vapor. Si no, siempre puedes darles un aventón en el horno y vuelven a crujir :)

  9. Bueno guapa, aunque los primeros fueran deformes seguro que estaban muy buenos, los terceros genial pero no te preguntes en que sigues fallando, seguro que la próxima vez que los hagas te salen estupendos, que de desastres en la cocina estamos todos completos, jejeje, besos
