C.DE LIMÓN Y GELATINA DE FRAMBUESAS {LEMON POSSET&RASPBERRY J.}

Un postre superfácil. Lo mejor, es que se puede hacer en dos partes. La crema de limón el día antes y la gelatina de frambuesa con unas horas de antelación. Es un postre tradicional inglés muy típico en la época medieval. 

A very easy dessert. The best part of it, it´s that you can make the lemon posset the day before and the raspberry one a few hours before serving it. It´s a traditional British dessert, typical in the middle ages.


CREMA DE LIMÓN CON GELATINA DE FRAMBUESAS / LEMON POSSET AND RASPBERRY JELLY

INGREDIENTES PARA 6 PERSONAS
PARA LA CREMA DE LIMÓN
900 ml de nata líquida
250 gramos de azúcar
125 ml de zumo de limón (aproximadamente el zumo de 4 limones)
PARA LA GELATINA DE FRAMBUESA
250 gramos de frambuesas
100 gramos de azúcar
1 rama de vainilla, cortada por la mitad
2 hojas de gelatina

INGREDIENTS - SERVES 6
FOR THE LEMON POSSET
900ml double cream
250g caster sugar
125ml lemon juice, about 4 lemons
FOR THE RASPBERRY JELLY
250g raspberries
100g caster sugar
1 vanilla pod, cut in half lengthways
2 gelatine leaf sheets


PROCEDIMIENTO - METHOD
Para hacer la crema de limón, ponemos a hervir la nata y el azúcar en una cazuela. Que hierba durante 5 minutos.

To make the posset, bring cream and sugar to the boil in a large pan, turn down heat and simmer gently for 5 min.



Añadir el zumo de limón, mezclar bien y volverlo a poner a hervir. Cuando hierbe, retirarlo del calor y dejar que se enfríe durante 10 minutos.

Add lemon juice, mix well and bring back up to the boil. Take off heat and leave to cool for 10min.


Echar la mezcla en recipientes. Yo he usado unos vasitos pequeños y unas copas algo mas grandes. Enfríarlo bien, si se puede hacer hasta aquí el día anterior mejor. Ahora haremos la gelatina de frambuesas.

Pour mixture into glasses. I´ve used small recipients and a couple of ice cream cups. Chill until well set, you can make this lemon posset a day before. We´ll procede with the raspberry jelly.


Poner la fruta, el azúcar, la rama de vainilla y una cucharada de agua en un bol al baño María. Tapar el bol con plástico y cocinar la fruta lentamente durante 30 minutos, meneando de vez en cuando con cuidado de no aplastar la fruta, queremos una gelatina limpia. Cuando haya pasado el tiempo, retiramos el bol del fuego (mantenemos el bol tapado con el plástico), y lo dejamos reposar durante 30 minutos mas.

Put fruit, sugar, vanilla pod and 1tbsp water into a heatproof bowl, position over a pan one-third full of simmering water. Cover bowl with a lid and cook gently for 30 min., stir gently, but try not to crush the raspberries, the aim is to get a clear liquid. Take bowl off heat, keeping the lid on, and leave to sit for 30min.


Mientras tanto, poner la gelatina en un bol, cubrirla con agua fría y dejarla a remojo durante 2 minutos. Colar las frambruesas por un colador fino (no apretar las frutas porque ensuciará el líquido resultante). Sacar la gelatina del bol, añadirla al caldo de frambuesas y calentarlo lentamente hasta que se disuelva. Reservarla y dejar enfríar y echarla por encima de cada crema. Reservarlos en el frigorífico.

In the meantime, put gelatine sheets in a bowl, cover with cold water and leave to soak for 3min. Strain raspberry mixture through a fine sieve (do not push the raspberries or the mixture will go cloudy). Return mixture to a small pan. Lift out the gelatine and add to the pan (discard water). Heat gently until the gelatine dissolves, then set aside to cool before pouring a thin layer on top of each posset.



Se puede hacer con cualquier otra fruta, pero las frambuesas aportan mucho color.

You can use any other fruit for the jelly, but I personally think raspberries add a beautiful color.
