SOLOMILLO RELLENO DE JAMÓN Y QUESO {STUFFED TENDERLOIN}


No se si es cosa de genetica o qué, pero cuando llevé esta receta a casa de mi madre, un sábado que me fuí a comer con ella, me enseñó que tenía la misma receta apuntada en un cuadernito. La había cogido de la tele, como yo, y le encantó que la llevara para probar porque así no tuvo que hacerla. 

I´m not sure if it´s all about genetics, but when I went to my mom´s, last Saturday, and brought this recipe with me so we could eat it together, she showed me a notebook where she had written the same recipe. She took it from a tv programme we both watch, so she was all happy she didn´t have to make it herself. A stuffed pork or beef tenderloin is an impressive and eye-appealing dish.

Solomillo relleno de jamón y queso. (Robinfood)


SOLOMILLO DE CERDO RELLENO DE JAMÓN Y QUESO / PORK TENDERLOINS STUFFED WITH HAM AND CHEESE

INGREDIENTES PARA 1 SOLOMILLO
4 orejones picados
1 solomillo de cerdo
2 lonchas de jamón de york
2 lonchas de queso (yo he usado havarti pero puede ser emmental)
4 dientes de ajo sin pelar
Aceite de oliva
Sal y pimienta para sazonar

INGREDIENTS FOR ONE TEDERLOIN
4 dried apricots, chopped
1 pork tenderloin
2 slices of boiled ham
2 slices of cheese. I´ve used havarti but emmental will just work fine
4 non peeled cloves of garlic
Olive oil
Salt and pepper to season

PROCEDIMIENTO - METHOD
El carnicero puede abrir el solomillo para facilitarnos la tarea a la hora de rellenarlos. Cortar el solomillo a lo largo y colocar en el centro el jamón cocido, el queso y los orejones picados.

You can always ask your butcher to open the tenderloins for you, so we´ll have less work when we have to stuff them. Slice the tenderloin lengthwise to create a pocket to stuff,  put the ham and the cheese in the centre. Scatter the chopped dried apricots.



Cerrar el solomillo con hilo de bridar, guardaran así la forma adecuada para poder cortarlos con facilidad.

So you’re going to need to tie them with some kitchen twine to close them and get them to stay in the right shape.


Precalentar el horno a 180º
Preheat the oven to 180ºC

Marcar el solomillo por todas sus caras a fuego vivo durante unos 10 minutos en una sartén antiadherente con el aceite.

Cook the tenderloin in a pan with olive oil for 10 minutes.


Colocar en una bandeja de horno junto a los ajos y hornear unos 10 minutos más. Retirar del horno y dejarlo reposar 5 minutos cubierto de papel aluminio, al que le hacemos dos agujeros para que la carne pueda respirar. 

Transfer them to a baking dish with the cloves of garlic and cook them for 10 more minutes. When they are done, leave them covered with foil paper and make two holes so the meat can breathe.


Se corta en lonchas al gusto de cada uno y se sirve con una ensalada, o un puré de patatas, o una salsa tipo gravy.

You can now sliced them to the size of your choice and serve it with a salad, a potato purée or a sauce, similar to gravy.

  7. Me encanta lo de madre e hija, están en lo mismo.
    El solomillo tiene muy buena pinta, magnificas las fotos detalladas con el procedimiento. El relleno fabuloso!!!
