LAS RECETAS DEL AMOR {LOVE RECIPES}

"Las recetas del Amor", is the title of a book a friend of mine gave me as a present years ago. I can´t cook hearts of any kind this year, there are such a beautiful hearts around this blogger´s world that I prefer to make something more passionate, actually that´s the way I feel, full of passion.

And www.whipperberry.com started her post telling us that "Love is in the air".

On the other hand, I will use such a beautiful book, to share a recipe with  you.

It just came into my mind, this so typical dessert from The Basque country, where I am, Intxaursalsa. One of my dad´s friends who had a restaurant, used to come to our home at Christmas bringing a big pot of this nut cream which nobody did at home because of the long hours cooking it. Actually this was a very old dessert. I have his recipe, one of those hand written recipes I like so much and I keep. To cook our Intxaursalsa, you needed very basic ingredients like nuts, sugar, cinnamon stick, whole milk and crumb, but it needs two hours cooking time.

But today, I´ve made this nut cream from this so romantic book.

"Even though this could sound as a fantasy, during Roman Greece, nuts were considered to be a symbol of fecundity and during weddings, the groom, thinking he would never need these symbols, he used to throw them to the children".

INGREDIENTS - SERVES 4 RAMESKINS
225gr peeled nuts
300 ml whole milk (if it´s goat´s milk much better)
45ml honey
4 egg yolks

PROCEDIMIENTO - METHOD

Chop the nuts and boil them in the milk, under low heat until they are softened and the milk has thickened.

Pasar a la batidora, añadir las yemas.

When the nuts are soft, put them in a processor. Add the egg yolks.

add the honey too,  and process until you get a think mixture.

You can either have it as an appetizer with some jamón or as a dessert with some biscuits.

And as I´m able to brag for having a requited love, I´ll remember one of my favourite symbols of love. In this case Anteros, the god of literally  "love returned" and also the punisher of those who scorn love. It´s in my favourite city no doubt.

  1. The heart-shaped donuts look to die for! I really need to get over my donut-phobia and try making them at home.

And the nut cream, oh my goodness, I can just imagine how wonderfully rich and creamy and nutty it tastes.
