FRITTATA, Y UNOS HONGOS MARAVILLOSOS {FRITTATA AND SOME WILD FUNGHI}


¿Es la fritatta una imitación de nuestra tortilla de patatas?. ¿Es que les daba miedo a los italianos dar la vuelta a la tortilla con un plato?. ¿Y cuando no había horno con grill, cómo hacían esta receta?.

Oh, is this dish an imitation of our "tortilla de patatas"? (Spanish omelette). Were the italians afraid of placing a plate (bigger than the circumference of the fringa pan) over the pan and swiftly slip it over?. And what when the grill didn´t exist in ovens, how did they make this frittata?.




La frittata es una especialidad de la cocina italiana similar a la tortilla francesa y que se suele rellenar de diferentes ingredientes tales como carne, vegetales, quesos, setas, etc. Los huevos se baten y los ingredientes se añaden en el bol o se colocan encima como si fuera una pizza. También se puede preparar similar a la tortilla española.

Frittata is an egg-based dish similar to an omelette or quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. It may be flavored with herbs.
The Italian word frittata derives from fritto, the past participle of "to fry" (friggere), and was originally a general term for cooking eggs in a skillet, anywhere on the spectrum from fried egg, through conventional omelette, to an Italian version of the Spanish tortilla de patatas, made with pasta instead of fried potato


FRITTATA Y HONGOS - FRITTATA AND WILD FUNGHI

INGREDIENTES - PARA 4 PERSONAS
1 manojo de cebolletas
5 cucharadas de aceite de oliva
1 manojo de perejil muy picado
225 gramos de queso Parmesano
6 huevos
1 calabacín en lonchitas
Sal y pimienta

INGREDIENTS - SERVES 4
1 bunch spring onions
5 tbsp olive oil
1 bunch parsley
6 whole eggs
225 parmesano Reggiano cheese
1 courgette finely sliced
Salt and pepper

PROCEDIMIENTO - METHOD

Precalentar el gratinador.

Preheat the grill.



Lavar y picar las cebolletas, sofreírlas en un par de cucharadas de aceite de oliva.

Wash and chop the spring onions. Soften in 2 tbsp of olive oil until lightly browned.






Antes de terminar con las cebollas, añadir las lonchas de calabacín, hasta que esté tierno.

Before the onions have finished, add the sliced courgette until soft and tender.




Picar el perejil.

Chop the parsley.




Batir los huevos en un bol. Añadir el parmesano, el perejil, las cebolletas y el calabacín. Sazonar con sal y pimienta.

Beat the eggs in a bowl adding the Parmesano, parsley, spring onions and courgette. Season with salt and pepper.





Echar la mezcla de huevo en una sartén con el resto del aceite de oliva. Cocinar a fuego medio hasta que la parte en contacto con la sartén esté totalmente cuajada. Colocarla en el horno con el grill hasta que se haya cuajado por encima. Esto tardará unos 3 minutos. Tener cuidado porque el centro debería estar blandito.

Heat the rest of the olive oil in a non-stick frying pan and pour in the egg mixture. Cook over a moderate heat until the bottom is browned, then put it under the grill to cook the top. This should take 3 minutes, depending on the size of the pan, but remember the center should still be slightly soft and runny.



Se puede servir la fritata con una ensalada de tomate aliñada solamente con aceite de oliva y sal.

You can serve the frittata with a tomato salad, simply seasoned with virgin olive oil and salt.



Pero mi I. me ha traído hongos hoy, así que nosotros la tomamos con unos hongos, hechos lentamente con un poco de ajo y perejil picado por supuesto. ¡Impresionantes!.

But my I. bought some wild funghi for me, and we ate this frittata with those. Slowly cooked, over a medium-low heat, and just with some garlic and chopped parsley. A delish!.

  4. Que buena!!! Una pinta riquísima!!! Los Portugueses también tienen una especie de tortilla de patatas pero en plan revuelto, pero como la nuestra nada de nada!!!Te sigo wapa!
