TARTA DE CALABAZA Y EL DÍA DE ACCIÓN DE GRACIAS {PUMPKIN PIE AND THANKSGIVING}

Hoy os traigo algunos cuentos de 1980, ¡casi nada!. Aquel año y durante los 8 meses que el amor de mi vida pasó trabajando duramente en la mili (entonces obligatoria), vale la foto no es del momento trabajo pero era para situarse en el momento, yo me cogí un Jumbo rumbo a Rochester para trabajar. Rochester está en el estado de Nueva York a una hora de las cataratas del Niagara. 
  1. I´m bringing you a short story from 1980, wow long time ago. That year and for the following 8 months, while my beloved one spent a terrible time in his military course...(well the picture was taken while they were taking a "short break" I guess), I jumped into a Jumbo Jet and flew all the way to Rochester to work in a huge plant there. Rochester is situated in New York State aprox one hour away from Niagara Falls.
Madre mía si que hacía frío allí, 17º bajo cero de media, algunos días menos..yo no había pasado tanto frío nunca.
  1. Wow, it was freezing cold there, average temperatures were -17ºC and below and let me tell you I had never experience such low temperatures in my whole life.
Pero tengo que estar agradecida por todo lo que experimenté en aquella casa, lo bien que me lo pasé con la familia con la que viví y lo preciosa que era su casa. 
  1. I have to be thankful for my experience there, I really had a great time with the family, they adopted me like if I was their daughter not to mention how beautiful the house was.
El matrimonio con el que estaba viviendo eran maravillosos, al Sr. y la Sra. S todo lo Europeo les volvía locos, la comida, la ropa, nuestras ciudades. Ella daba clases de arte para mujeres jubiladas y me gustaba mucho lo activa e independiente que era. El Sr. S. trabajaba en la misma empresa donde yo tenía que hacer aquel curso, así que salíamos y volvíamos a casa juntos.
  1. The couple I was living with were wonderful, Mr. and Mrs S. loved all the European stuff, specially our food, our clothes and our cities. She used to teach art to retired women and I loved her active life and her independence. Mr. S worked in the same factory I was attending to the course so we used to leave early and go back home together every day.
Tuve la suerte de celebrar allí el día de Acción de Gracias. Fué la primera vez que comí pavo, la primera vez que hice galletas decoradas, la primera vez que ayudé a preparar un buffet para el día siguiente con todas las sobras del día anterior, (los vecinos íbamos de casa en casa probando las diferentes variantes del pavo) y la primera vez que participé activamente en trabajos de una comunidad. Me lo pasé bomba cotilleando todas las casa y conociendo a las amigas de Shirley, era la única española en kilómetros a la redonda así que también una atracción.
  1. I had the chance to celebrate Thanksgiving there. It was the first time for me to eat turkey, the first time I made decorated cookies with her, first time I helped her to organise a buffet for the following day with all the leftovers, neighbours dropped by to eat sandwhiches and cookies, so I can say it was the first time I really took part in the neighbourhood duties. I had a blast visiting all the houses and meeting Shirley´s friends who lived close by. I was the only Spaniard in miles and for that like another attraction to them. I had a great time really.
Aquí debajo decorando mis primeras galletas, no me podía imaginar lo que iba a ser el mundo de las galletas para todos mas adelante. Aquella cocina azul clarita tan bonita.
  1. Here below decorating some cookies. I could never imagine then that years after we would go crazy to decorate cookies everywhere. Her light blue cabinets were so beautiful in that kitchen.

La comida fue maravillosa, el proceso de tratar al pavo durante los días anteriores a la preparación, todas aquellas horas dentro del horno. Aquel relleno interminable de cebollas super picadas, las salchichas desmenuzadas, manzanas, almendras, tomillo, ralladura de limón, los huevos batidos, sal, pimienta, todo rehogado con mantequilla....la casa olía de maravilla. Y aquella tarta de calabaza que he hecho hoy, con el permiso de Mrs S. que murió hace unos años y a quien tuve oportunidad de volver a ver en otro viaje a Estados Unidos 20 años mas tarde.
  1. The food was gorgeous, the process of treating the turkey during the previous days, the roasting hours. That wonderful stuffing full of chopped onions, the sausages skinned and sliced, the apples cored, the walnuts, the fresh thyme, the zest of lemon, the beaten eggs, the salt, the pepper, all sauteed in a saucepan with butter, oh God!, the house smelled wonderfully. And of course her pumpkin pie for dessert, I had never heard such a thing before. And this is the recipe I´m using today, hers. Mrs S. passed away a few years ago now, and I was lucky to meet the couple again like 20 years later my first trip to their house.
 
TARTA DE CALABAZA

INGREDIENTES PARA 8 PERSONAS
2 tazas de puré de calabaza, aproximadamente es 1 kilo. Ellos utilizaron lata Libbys
Nata batida para decorar
3/4 de taza de azúcar moreno
1 cucharada de harina de maíz
1 cucharadita de sal
1 cucharadita de canela en polvo
3 huevos batidos y uno mas para pintar la masa
1 cucharadita de ralladura de jengibre
1 vaso de leche evaporada
Pasta brisa comprada o hecha en casa como esta

PROCEDIMIENTO
1. El día anterior. Precalentar el horno a 180º y asar la calabaza durante 1 hora.
2. Cuando haya pasado el tiempo, con una cuchara quitar las pepitas y echar el puré en un colador. Se pone peso encima para que elimine todo el agua y se mantiene así durante toda la noche.
3. Al día siguiente hacer primero la pasta brisa. Si no se quiere trabajar, se  puede usar una comprada de supermercado. Para manipular la masa hay que tener todo bien frío, desde las manos hasta los utensilios. Precalentar el horno a 200º.
4. Cuando la masa está hecha y ha reposado en el frigorífico, forrar un plato para tartas. Pintarla con huevo batido.
5. Ahora llega lo mas fácil Mezclar en un bol todos los ingredientes. Primero pasar la calabaza con la batidora y hacer un puré. Añadir el azúcar moreno y la harina de maíz. Seguir con la sal, el jengibre, la canela, los huevos, la leche evaporada, el puré de calabaza y mezclarlo todo bien.
6. Hornearla durante 60 minutos. Los primeros 10 minutos a 200º y luego bajar la temperatura a 170º hasta terminar con el tiempo. ¡ Ya huele a navidad!. 


PUMPKIN PIE

INGREDIENTS SERVES 8
2 cups of pumpkin purée (Libby´s) if we make it from scartch, well need one kilo of pumpkin.
Whipped cream to serva
3/4 cup of light brown sugar
1tbsp corn flour
1tsp salt
1tsp ground cinnamon
1tsp ground ginger
3 large eggs, beaten plus one more to paint the shortbread crust
1 glass of evaporated milk
Ready made pastry or homemade

METHOD
1. The previous day, pre heat the oven to 180º, bake the pumpkin in the oven with butter for an hour.
2.  When it´s over, scrape the insides with a spoon. You want to get out everything to make the purée after. Put it on a drainer and leave it overnight to get rid of the excess of water.
3. The following day, make the shortcrust pastry. If you don´t want to much mess, you can always buy ready made one. To manipulate the pastry, if you finally make it, everything has to be really cold, frozen I would say, from fingers to bowls.
4. When the pastry is made and has been removed from the fridge, transfer it to a pie´s plate and brush it with beaten egg.
5. After the hard work is behind you, here´s where it gets really easy. Mix all the ingredients in a bowl. First, process the baked pumpkin. Add the light brown sugar, the cornstarch, go on with the salt, the ginger, the cinnamon, the eggs, the evaporated milk, the pumpkin purée and combine everything well.
6. Preheat the oven to 200º and bake it for 60 minutes. The first 10 minutes at 200º , then turn the temperature down to 170º and bake it for another 50 minutes. Christmas is all around!.
