Y DE POSTRE HOY FLAN {CREAM CARAMELFOR TODAY´S DESSERT}

A la gente de mi casa el flan les encanta. Cuanto mas cremoso, mucho mejor. Mmm, muy tentador pero yo no lo voy a comer. A mis chicos les parece el postre perfecto.

The ones who live in my house think cream caramel is the perfect dessert. If its rich and creamy much better. Ah!, this is deliciously tempting but I can´t eat this.


FLAN - CREAM CARAMEL

INGREDIENTES - SALEN 9 FLANERAS
PARA EL CARAMELO
200 gramos de azúcar

PARA LA CREMA
1 rama de vainilla
3 cucharadas grandes de azúcar
4 huevos
4 yemas
100ml de crema de leche
1/2 litro de leche entera

INGREDIENTS  - SERVES 9 RAMEKINS
FOR THE CARAMEL
200g caster sugar

FOR THE CUSTARD
1 vanilla pod
3tbsp caster sugar
4 medium eggs
4 medium egg yolks
100ml double cream
500ml full cream milk

PROCEDIMIENTO - METHOD

Hacer primeramente el caramelo. Poner el azúcar en un cazo a hervir lentamente a fuego bajo hasta que se disuelve todo el azúcar. Menearlo un poquito para tener la seguridad de que se ha disuelto todo y antes de poner el fuego un poco mas fuerte. Llevarlo a ebullición durante unos minutos o hasta que se vuelve un poco más dorado. Dejarlo que burbujee y listo, se distribuye en las flaneras. Ponerlas en una fuente de horno.


First, make the caramel. Put the sugar over a very low heat to slowly dissolve it until you have a clear syurp. Give it a light stir to make sure all the sugar has dissolved and there´s no grittiness, before turning up the heat. Bring the syrup to boil until it turns a deep golden caramel colour. There is no need to stir, just let it bubble. Pour an equal amount of caramel into each ramekin to coat the bottom. Put into a deep roasting tin.








Precalentar el horno a 180º.
Partir la rama de vainilla y sacar las semillas interiores y mezclarlas con el azúcar.

Preheat the oven to 180º
Split the vanilla pod, scrape the seeds into the sugar and mix.






Batir los huevos y las yemas en un bol, cuando están bien batidos echar el azúcar con la vainilla. Poner a hervir la leche, la crema y la rama de vainilla durante 5 minutos o hasta que esté caliente, sin hervir. Colar el líquido e incorporar a los huevos batidos.

Whisk the eggs and yolks in a bowl, then whisk in the sugar. Put the milk, cream and vanilla pod into a pan and heat for five minutes, until hot, not boiling. Sieve the liquid into a jar and then into the egg mixture and whisk.







Distribuir la mezcla en las flaneras que ya las tenemos en la fuente de horno.

Pour the mixture into the ramekins.





Llenar la fuente de horno con agua hasta la mitad.

Half-fill the roasting tin with hot water.




Hornear durante 15/20 minutos o hasta que el flan esté cuajado. Tiene que menearse un poco, no debe estar excesivamente cuajado así que dependerá del horno de cada uno. Yo a los 15 minutos estaba comprobando por si acaso.
Sacarlos del horno y dejar que se enfríen.


Bake for 15/20 minutes, until the caramel is set, but with a slight wobble. It shouldn´t be too set so you should check your time depending on the oven. I´ve been checking at 15 minutes just in case.
Take them out of the oven and leave to cool, the put in the fridge.






Después pueden meterse en el frigorífico. Desmoldar y comer.

Lift the ramekins off and eat. The caramel will flow over the custard and on to the plate.





A la hora de comer, las fotos siempre con prisas. Mis "chicos" (hombres), no han esperado hasta mañana para comerse el flan. Tengo que decir que el flan mejora si se deja toda la noche en el frigorífico, esto permite que el caramelo en la base envuelva mejor la crema y tendrá mas sabor. Pero hoy había prisa para comer los flanes así que mañana se comerán el resto. El acompañamiento perfecto para mí es servirlo con nata montada, ya se que no es un clásico, pero a mí me encanta.

At the time I was going to take the pictures everybody was in a hurry. My boys (men), didn´t want to wait until tomorrow to eat the cream caramels. I have to say that this dessert improve if left overnight in the fridge. This allows the caramel in the base of the ramekin to soak more into the custard, so when the pudding is turned out, the top is a richer colour and tastes better.  But today, this was impossible, I suppose they will eat the improved ones tomorrow. Serve with pouring cream, not totally classic but delicious, I love it that way.
