EL LOMO ASADO DE ELVIRA {ELVIRA´S POT ROAST LOIN}

Después de nuestras clases de pilates matutinas, hablamos de cocina y otras cosas mientras nos tomamos un café. En una de nuestras charlas, sale esta receta que han probado todas menos yo. "¡La tengo que hacer!", le dije a Elvira. 
Ella me trajo la receta el lunes, escrita a mano, que es como a mí me gusta. Ya sabe todo el mundo lo mucho que me gusta escribir, así que guardaré esta receta como "oro en paño" en mi cuaderno de "recetas escritas a mano".


When our Pilates finishes in the morning, we go to have a coffee and talk about cooking or any brought up subject. Basically is our morning therapy. In one of those conversations, this recipe arises from a confluence of ideas and inspiration. I realised then I was the only one who hadn´t made it yet. "I have to make it!", I told Elvira.
Elvira came to the class on Monday and she kindly brought me the recipe, handwritten!, which is something I love. Everybody knows by now I love writing, so I´ll keep the recipe as a treasure in a folder which says "hand written recipes".

LOMO ASADO DE ELVIRA CON ZUMO DE NARANJA - ELVIRA´S POT ROAST LOIN WITH ORANGE JUICE.

INGREDIENTES PARA 6 PERSONAS
Una pieza de lomo de 1 kg 300
4 cebollas (yo he usado 2 blancas y 2 rojas), picadas
4 zanahorias, peladas y picadas
2 dientes de ajo, pelados y picados
Sal
Pimienta
Aceite de oliva (para la cazuela)
Media taza de café de cognac
Una cucharada rasa de azúcar
250 cc (1 vaso) de zumo de naranja

INGREDIENTS - SERVES 6
A piece of pork loin of about 1 kg 300 g.
4 onions (I´ve used 2 red and two white)chopped
4 carrots, peeled and chopped
2 cloves of garlic, chopped
Salt
Pepper
Olive oil (for the pot)
Half coffee cup of cognac
One tbsp of sugar
250 cc. (one glass) orange juice

PROCEDIMIENTO - METHOD
Sazonar el lomo con sal, añadir la pimienta recién molida por todo el lomo y dorarlo en la cazuela.

Season the loin, with salt, grind some black pepper all over it and brown it in the pot.



Cuando el lomo esté dorado por todas partes, incluyendo las esquinas, sacarlo de la cazuela y empezar a cocinar las verduras. Cuando estén pochadas, volveremos a meter el lomo en la cazuela.

When the loin is all browned on all sides including the ends, reserve it and we will now sauté the veggies in the pot. When they are coloured we will put the loin back.

Empezar con las cebollas

Start with the onions


Seguir con las zanahorias y los dientes de ajo.

Go on with the carrots and the cloves of garlic


Cuando las verduras están pochadas, volver a meter el lomo dentro de la cazuela. Echar el zumo de naranja.

When the veggies are cooked, put the loin back in the pot. Add the orange juice.

Y cocinarlo a fuego lento durante 20 minutos

And slow cook it for 20 minutes.


Cuando pase este tiempo, sacar de nuevo el lomo y dejarlo enfriar. Cuando esté frío, lo cortaremos en lonchas.

When time is over, put the loin on a rack to cool for a while. It will be easier to slice it if it´s not so hot. 


La grasa del lomo lo mantendrá tierno y jugoso, es importante no cocinarlo durante mucho tiempo porque después lo tendremos que calentar y se terminará el tiempo de cocción.

Loin fat, will keep the meat tender and moist. It´s not convenient to overcook the loin because we will have to reheat it with the sauce later,  and the cooking time will be finished then.


Volvemos con las verduras para hacer la salsa

Let´s go back to the veggies now and process the sauce.


Usar un pasapurés.

Use a food mill to process the vegetables.


El resultado de la salsa, increíble. El pasapurés le da una consistencia que no se obtiene con una batidora. Así que animo a todo el mundo a usar el pasapurés.

The result is the one I wanted and I personally think, it´s impossible to obtain with a blender. I think food mill is better four sauces.


Para servir con esta receta, puré de manzana. Cocer las manzanas troceadas con un poco de mantequilla, sin ningún otro líquido adicional. No es necesario.

To serve as a sidedish, I made some apples puré. Simply boiled the apples, cut in pieces and with some butter. Don´t add water or any other liquid. It´s not neccesary.

  3. Gracias susana y eu, y eso que he perdido las fotos de medio blog, pero las voy añadiendo poco a poco de nuevo, cada día 5 o 6 entradas, lo que me da de sí el tiempo.

La receta de hoy tiene muy buena pinta, el cambio del blog bien, y en cuanto a como expresas (recetas y pensamientos) esta muy bien, te imagino dando clases de cocina a algun grupo de jovencitas ¡tendrias exito seguro! UNA PENA LO DE LAS FOTOS ESPERO LO ARREGLES PUES SON MUY BONITAS.BESOSSSSSS

  7. Me encanta una receta escrita a mano, para mi son pequeñas joyas! Mi madre hacia un lomo así, diria que igual excepto la zanahoria, a ver si lo hago que tengo dos cintas de lomo en el congelador. Bss
