CREMA DE ESPINACAS CON TOCINETA {CREAM OF SPINACH}


Aunque estamos en pleno invierno, hoy, parece que estamos en primavera. La temperatura no es muy alta a estas horas de la mañana, así que aunque el día sea maravilloso, todavía nos quedan días para disfrutar de cremas, sopas y comida de cuchara.


Though we are in the middle of the Winter season, today´s weather,  makes you think we have already reached Spring. Temperatures weren´t so high in the early morning hours, so no matter how awesome the day is, we still have many days left to enjoy cream soups, soups and comfort food.


El queso ricotta, hecho con leche de oveja o leche de vaca es originario de Italia, especialmente en el Sur del país y en Sicilia. Los cannolis (plato típico Siciliano) se rellenan con ricotta azucarada. El ricotta no es un queso como los demás, sino un producto derivado de la fabricación del queso. En esta receta, cuando el queso ricotta entra en contacto con la crema de espinacas, se vuelve extremadamente suave y cremoso.

Made from cow´s milk or sheep´s milk, ricotta ir originated in Italy and widely used especially in the South of the country and in Sicily. Cannolis, are filled with ricotta that has been sweetened with sugar.
This, strictly speaking is not really a cheese but a sort of by-product of cheesemaking. Gently warmed by the heat of the cream, the ricotta turns exquisitely soft and creamy.


CREMA DE ESPINACAS CON QUESO RICOTTA Y TOCINETA - CREAM OF SPINACH SOUP WITH RICOTTA AND PANCETTA

INGREDIENTES - INGREDIENTS
50 g mantequilla - 50 g unsalted butter
3 cebolletas, peladas y picadas - 3 white onions, peeled and chopped
sal y pimienta - salt and pepper
1 litro de caldo de pollo - 1 litre chicken stock
1 kg espinacas - 1 kg spinach
8 lonchas de tocineta - 8 rashers of pancetta or smoked bacon
4 cucharadas de queso ricotta - 4 tbsp ricotta


PROCEDIMIENTO - METHOD
Derretir la mantequilla en una sarten a fuego lento, añadir las cebolletas, echar sal y pocharlas durante 15 minutos hasta que esté suave. Remover ocasionalmente sin dejar que tome color.

Melt the butter in a large saucepan over a lowish heat, add the onions, scatter over a teaspoon of salt and sweat for 15 minutes until soft. Stir occasionally, without allowing them to colour.


Añadir el caldo de pollo, llevar a ebullición. Añadir ahora las espinacas y esperar que coja de nuevo el hervor. Tenía caldo de pollo congelado que hice con pollo, y verduras.
Cocinar durante 10 minutos, removiendo las espinacas para que todas se cocinen bien. Cuando finaliza el tiempo, pasar la crema por la batidora.

Sazonarla con pimienta y más sal si fuera necesario.
Mientras se cocina la crema, freir la tocineta por ambos lados hasta que esté dorada y crujiente.



Pour in the chicken stock, bring to the boil, then add the spinach and wait until the stock is back to the boil. Cover and cook over a low heat for 10 minutes, stirring the cream after a couple of minutes to submerge the leaves so all the leaves cook well.
I´ve used chicken stock made with chicken and veggies I had in my freezer.
Purée the cream in a liquidiser.

Season with pepper and a little more salt if necessary.
While the cream is cooking, grill the bacon on both sides until golden and crisp.

Para servir, poner una cucharada colmada de ricotta en el centro del plato o de un bol, y echar la crema alrededor del mismo. Colocar un par de lonchas de tocineta y servir. Yo además, he hecho unos tostones de pan frito que es lo que más les gusta en mi casa.



To serve, place a tablespoon of ricotta in the centre of the warm bowl or plate and ladle the soup around it. Lay a couple of rashers of bacon in the middle and serve at once. I´ve also made some homemade fried croutons, which is what my family most enjoy with a cream.
